- 4 , 5oz. Salmon fillets
- 3 T. finely chopped pepitas
- 1/2 t. kosher salt
- 1/2 t. cumin
- 1/2 t. ancho chili powder
- 1/2 t. smoked paprika
- 1/4 t. cayenne
- 2 T. avocado oil

Brown beef in large pot and drain
- 1 lb. lean ground beef
- 1 small onion, minced
- 2 T. curry powder
- 1 qt. low sodium chicken broth
- 1/4 cup tomato sauce
- 1/2 lb. green beans, cut into 1" pieces
- 3 cups Basmati rice
- 1-2 T. Vegetable oil
KFC Cole Slaw

Make sure the cabbage and carrots are chopped into very fine pieces
- 8 cups (1 head) cabbage, finely chopped
- 1/4 cup shredded carrot
- 1/3 cup sugar
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup milk
- 1/2 cup mayonnaise
- 1/4 cup buttermilk
- 1 1/2 tablespoons white vinegar
- 2 1/2 tablespoons lemon juice

Combine all ingredients in a pot, heat and serve
- 1 jar Eggplant Garlic Spread
- 1 pkg. steamed lentils
- 1 box chicken broth

In food processor with motor running, puree garlic and salt
- 1 large clove garlic, remove any green in center
- 1/8 t. salt
- 2/3 c. tightly packed young basil leaves
- 2 heaping T. pine nuts
- 1/4 c grated Pecorino
- 1/2 c (scant) Parmesano-Reggiano
- 6 T. evoo
Teriyaki Sauce and Marinade

Bring mirin to a boil in a saucepan over high heat
- 2/3 cup mirin*
- 1 cup soy sauce
- 4 1/2 teaspoons rice vinegar
- 1 teaspoon sesame oil
- 1/3 cup white sugar
- 7 cloves garlic, minced
- 1 tablespoon minced fresh ginger
- 1 dash red pepper flakes
- black pepper to taste
Spaghetti Pizza

Cook pasta in boiling water with oil and a dash of salt
- 8 oz. Spaghetti, vermicelli or angel hair
- Boiling water
- 1 T. cooking oil (optional)
- 2 t. salt
- 1 egg
- 1/2 cup milk
- salt, sprinkle
- pepper, sprinkle
- 7 1/4 oz. tomato sauce
- 1 t. Oregano
- 1 t. Basil
- 1 cup Grated mozzarella cheese
- 1 T. Margarine (butter browns too fast)
- 1/2 lb. Lean ground beef
- 1/4 cup Chopped onion
- 6 Fresh mushrooms, sliced
- 3 T. Chopped green pepper
- 6 Green and black olives, sliced
- Grated Parmesan Cheese, sprinkle
Vegan Banana Chocolate Chip Muffins

In a medium bowl, mix the flour, salt and baking soda
- 2 cups unbleached all-purpose flour
- 1-1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup granulated sugar
- 1/3 cup canola oil
- 4 very ripe bananas, mashed
- 1/4 cup water
- 1 tsp vanilla extract
- 1 cup non dairy semi-sweet chocolate chips
Pesto Pasta with Beans

In a large sauce pot over low heat, sautee garlic and thyme in a bit of oil for two minutes
- * olive oil or vegetable oil
- 1 * 1 cup diced onions
- 2 * 2 tbsp garlic, sliced thin
- 1 * 1 tbsp minced thyme
- 1 * 1 cup chopped canned tomatoes
- 1 * 1 15.5 ounce can Great Northern or Cannelini beans, with liquid
- 1/4 * 1/4 tsp salt
- 1 * 1 pinch black pepper
- 1 * 1 tbsp vegetarian pesto, pre-made or store bought
- 1 * 1 pound wagon wheel pasta, cooked according to package directions
Orange and Olive Salad

Black or kalamata olives. 158 calories per serving
- 1/4 c EVOO
- 2 cloves garlic, lightly smashed
- 2 strips (1x3 inch) orange rind, sliced lenghtwise into thin julienned strips
- 2 sprigs fresh thyme
- 1 cup pitted kalamata or canned black olives
- 6 large or 8 small navel oranges
- 1/4 t salt
- finely ground black pepper
