Fish - Brown Sugar-Glazed Salmon With Green Beans and Shallots

Cook the rice according to the package directions
- 2 cups long-grain white rice
- 2 tablespoons plus 1 teaspoon olive oil
- 1 1/2 pounds green beans, trimmed
- 2 shallots, thinly sliced
- 4 cloves garlic, thinly sliced
- kosher salt and black pepper
- 1/2 cup light brown sugar
- 2 teaspoons balsamic vinegar
- 8 6-ounce pieces skinless salmon fillet
- lemon wedges, for serving

- 3 1/2 cups cooked long-grain white rice
- 3 cups garlicky green beans, cut into 3/4-inch pieces
- 4 6-ounce pieces cooked salmon, broken into pieces
- 1 tablespoon canola oil
- 1 tablespoon chopped fresh ginger
- 1 red jalapeño or serrano pepper, sliced
- 1 small head napa cabbage, thinly sliced (about 6 cups)
- 1 1/2 cups frozen peas
- 3 tablespoons rice vinegar
- kosher salt
- cilantro leaves, for serving
Turkey - Meatballs

Combine the onion, garlic, herbs, and arugula in the bowl of a food processor and pulse until very finely chopped
- 1 small onion, roughly chopped
- 2 garlic cloves, roughly chopped
- 8 fresh sage leaves
- 8 large fresh basil leaves
- Leaves from 4 sprigs of thyme
- Leaves from a 5-inch sprig of rosemary
- 1/4 cup Italian parsley
- 1 large handful of arugula roughly chopped
- 1 pound ground turkey
- 1 teaspoon coarse sea salt
- 1/2 teaspoon freshly ground black pepper
- 4 cups of organic tomato sauce
- 3 tablespoons extra virgin olive oil
Xmas - Cranberry Sauce

In a small saucepan combine cranberries, orange juice and zest, port, sugar and cinnamon
- 2 cups cranberries
- Juice and chopped zest of 1 orange
- 1/4 cup Port
- 1/2 cup sugar, or more if needed
- 1 teaspoon cinnamon
- 1 tablespoon cornstarch

- 2 stalks lemon grass
- 6 cups low sodium chicken stock
- 2 tbsp olive oil
- 1 cup finely chopped onion
- 2 cups arborio or carnaroli rice
- 1/2 cup white wine
- 1 tbsp grated lemon zest
- 2 tbsp unsalted butter
- 1/4 cup grated Parmesan cheese
- salt and pepper to taste

- 1 1/8 cup (126g) cake flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (200g) granulated white sugar
- 4 tablespoons (56g) unsalted butter, softened
- 1/4 cup vegetable oil
- 6 tablespoons (1/4 cup + 2 tablespoons) sour cream
- 2 tablespoons milk
- 2 teaspoons vanilla bean paste or pure vanilla extract
- 1 large egg + 2 large egg yolks, room temperature (separate when cold)

- 1/8 cup sour cream
- 1 cup Greek yogurt
- 1/2 tbsp steak seasoning
- 1/2 cup dry-roasted pistachio nuts chopped

Pulse all ingredients - except pistachios - in a food processor until incorporated
- 1 avocado
- 1 cup packed parsley and cilantro leaves (combined)
- 1 jalapeño, ribs and seeds removed
- 2 cloves garlic
- juice of one lime (or two - get lots of limey goodness in there!)
- 1/2 cup water
- 1/2 cup olive oil
- 1 teaspoon salt
- 1/2 cup pistachios (you can sub other nuts - see notes)

- 1/2 cup fresh lime juice (2 large limes)
- 1/4 cup vegetable oil
- 2 Tbsp Honey
- 1 Tsp Thyme
- 1 Tsp Rosemary
- 1 garlic clove (crushed)

Combine cucumbers, corn, and sugar snaps in a bowl
- 2 Kirby cucumbers, unpeeled and thinly sliced (about 2 cups)
- 1 1/2 cups fresh corn kernels (from 2 ears)
- 9 ounces sugar snap peas, trimmed (2 3/4 cups)
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra-virgin olive oil
- Coarse salt and freshly ground pepper
- 2 firm-ripe avocados, halved and cut into wedges
