  • 1 seedless cucumber, thinly slice lengthwise
  • 1 small sweet onion, thinly sliced
  • 1 cup fresh mint leaves cut in half lengthwise
  • 1/2 cup dry roasted peanuts or cashews, coarsely chopped
  • Garnish: lime slices, fresh mint
  • 4 Tablespoons soy sauce
  • 8 Tablespoons sweet chili sauce
  • 8 Tablespoons fresh lime juice
  • 4 teaspoons fresh ginger, peeled and minced

  • 11/2 tbsp tandoori powder
  • 1 garlic clove minced
  • 1 cup plain yogurt
  • 1 finely chopped medium onion
  • 3 tbsp olive oil
  • 2 tsp masala
  • 1 tsp tumeric
  • 1 tsp salt
  • 1/4 tsp curry powder
  • 1 can tomato soup
  • 1/2 cup whipping cream
  • if you cannot find tandoori powder, use the tandoori masala mix (superstore) in the marinade and skip the masala in the sauce mixture.
