Salad - Easy Rice Noodle Salad

- Dressing:
- 6 ounces rice noodles
- 2 carrots, peeled and thinly sliced lengthwise
- 1 seedless cucumber, thinly slice lengthwise
- 1 small sweet onion, thinly sliced
- 1 cup fresh mint leaves cut in half lengthwise
- 1/2 cup dry roasted peanuts or cashews, coarsely chopped
- Garnish: lime slices, fresh mint
- 4 Tablespoons soy sauce
- 8 Tablespoons sweet chili sauce
- 8 Tablespoons fresh lime juice
- 4 teaspoons fresh ginger, peeled and minced
Chicken - Butter Chicken

Cut chicken into cubes and put in an air tight container
- 4 chicken breasts
- 11/2 tbsp tandoori powder
- 1 garlic clove minced
- 1 cup plain yogurt
- 1 finely chopped medium onion
- 3 tbsp olive oil
- 2 tsp masala
- 1 tsp tumeric
- 1 tsp salt
- 1/4 tsp curry powder
- 1 can tomato soup
- 1/2 cup whipping cream
- if you cannot find tandoori powder, use the tandoori masala mix (superstore) in the marinade and skip the masala in the sauce mixture.
Fish - Heavenly Halibut

Preheat the oven broiler. Grease a baking dish
- 1/2 cup grated Parmesan cheese
- 1/4 cup butter, softened
- 3 tablespoons mayonnaise
- 2 tablespoons lemon juice
- 3 tablespoons chopped green onions
- 1/4 teaspoon salt
- 1 dash hot pepper sauce
- 2 pounds skinless halibut fillets

make sure to prep topping like whip cream, bacon, mini chocolate chips and fruit
- 2 cups Buttermilk Pancake Mix
- 2/3 cup white sugar
- 1 1/3 cup water called for on the back of the box
- 2 large egg, room temperature
- 4 tablespoons unsalted butter, melted OR vegetable oil
- 2 teaspoon vanilla extract
- May substitute pancake mix with 2 cup flour, mixed with, 2 teaspoon baking powder, 1 teaspoon baking soda and 1/2 teaspoon salt and use buttermilk instead of water.
Pork -Vietnamese Style Pork Vermicelli

- 1/2 cup (125 mL) shallots or onions
- 3 tbsp (45 mL) packed brown sugar
- 2 tbsp (25 mL) lime juice
- 2 tbsp (25 mL) fish sauce
- 1 tbsp (15 mL) vegetable oil
- 1/2 tsp (2 mL) pepper
- 4 pork loin centre chops, boneless, trimmed
- 4 oz (125 g) rice_vermicelli
- 1 cup (500 mL) shredded leaf lettuce or bean sprouts
- 1/2 cup (125 mL) finely grated carrot
- 1/2 cup chopped peanuts
- 1 cup cucumber julienned
- 1/4 cup (50 mL) each shredded fresh mint and coriander
Soup - Beef Barley Soup

In a large heavy pot cook the beef over medium heat, breaking it up with a spoon, until no longer pink
- 11/2 lbs (750 grams) ground beef
- 1 large onion
- 3 carrots, peeled and chopped
- 2 celery stocks, peeled and chopped
- 1 red pepper, chopped
- 2 garlic cloves, mashed
- 1 - 28 oz (796 mL) can of diced tomatoes
- 6 cups beef broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp freshly ground pepper
- 1 tsp salt
- 1/3 cup pearl barley
Xmas - Candied Pecans

Great on a salad or accompanied with a charcuterie plate
- 2 egg whites
- 1/2 tablespoon vanilla
- 1/2 tablespoon water
- 1 pound pecan halves
- 1/2 cup white sugar
- 1/2 brown sugar
- 1 1/2 teaspoon kosher salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon all spice
- 1/8 teaspoon cayenne pepper
Fish Tacos with Avocado Sauce

In a large resealable plastic bag, combine the lemon juice, oil and garlic
- FISH:
- 1/4 cup lemon juice
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 pound halibut or mahi mahi
- SAUCE:
- 1/2 medium ripe avocado mashed
- 1/4 cup fat-free sour cream
- 1/4 cup reduced-fat mayonnaise
- 1 tablespoon lime juice
- 1 garlic clove, minced
- 1 teaspoon dill weed
- 1/4 teaspoon ground cumin
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried parsley flakes
- Dash cayenne pepper
- SALSA
- 1 1/2 avocados diced
- 1/2 cup diced mango and or
- 1/2 cup diced pineapple
- 1 medium tomato, seeded and chopped
- 1-1/2 teaspoons lime juice
- 1 garlic clove, minced
- 1/8 teaspoon salt
- TACOS:
- 8 flour tortillas (6 inches)
- 2 cups shredded cabbage

- 11/4 cups all purpose flour
- 1/2 cup unsweetened cocoa powder
- 2 tsp baking powder

- 11/2 cups packed golden brown sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1/3 cup whole milk
- 1 cup granulated sugar
