Salad - Summer pasta slad

Havent tried but looks like something kids would enjoy
- Ingredients
- 1/4 cup (50 mL) grated Parmesan cheese
- 1/4 cup (50 mL) extra-virgin olive_oil
- 1/4 cup (50 mL) red_wine_vinegar
- 2 tbsp (25 mL) Dijon_mustard
- 2 cloves garlic, minced
- 1/2 tsp (2 mL) each salt and pepper
- 3 oz (90 g) thinly sliced salami
- 3/4 cup (175 mL) kalamata_olives, pitted
- 2 cups (500 mL) grape or cherry_tomatoes
- 6 cups (1.5 L) penne pasta (1-1/2 lb/750 g)
- 3/4 cup (175 mL) chopped roasted sweet red pepper
- 1/2 cup (125 mL) chopped fresh basil or parsley
Salmon and Italian Veggies in Foil

Perfect for a make ahead meal and cottage time
- 4 (6 oz) skinless salmon fillets
- 1 1/4 lbs fresh green beans , ends trimmed or 1 lb (medium/thin) asparagus, tough ends trimmed
- 3 tsp olive oil , divided
- Salt and freshly ground black pepper
- 4 Tbsp pesto
- 4 tsp fresh lemon juice
- 1 pint grape tomatoes , halved

its really celery root puree but the kids and dad love it!
- 1 celery root, (about 675 g )peeled and cut in 1-inch (2.5 cm) (2.5 cm) chunks
- 1 russet potato, (about 340 g), peeled and cut in 1-inch (2.5 cm) chunks
- 2 cloves garlic, smashed
- 1/3 cup (75 mL) shredded Gruyère cheese
- 1/4 cup (60 mL) 10% cream
- 1/4 tsp (1 mL) salt

- 1 1/4 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp cinnamon
- 3 tsp canola or walnut oil
- 1 large egg, beaten
- 2 medium egg whites, beaten
- 3 large bananas, ripe
- 1 cup uncooked old fashioned oats
Barley Salad with Spinach and Strawberries

Great Summer Salad
- Vinaigrette:
- 1 cup dry pearl or pot barley (250 mL)
- 4 cups baby spinach, roughly chopped (1 L)
- 1 celery stalk, finely chopped (1)
- 2 green onions, finely chopped (2)
- 2 cups strawberries, hulled and halved (500 mL)
- 1/2 cup soft goat cheese (125 mL )
- 1/3 cup chopped pecans, toasted (75 mL)
- 1/4 cup canola oil (60 mL)
- 3 Tbsp balsamic vinegar (45 mL)
- 2 Tbsp maple syrup (30 mL)
- 1 tsp grainy mustard (5 mL)
- 1/4 tsp ground black pepper (1 mL)
Panzanella Salad

Place tomatoes in a colander set over a bowl and season with 2 teaspoons kosher salt
- 2 1/2 pounds mixed tomatoes, cut into bite-sized pieces
- 2 teaspoons kosher salt, plus more for seasoning
- 3/4 pound ciabatta or rustic sourdough bread, cut into 1 1/2-inch cubes (about 6 cups bread cubes)
- 10 tablespoons extra-virgin olive oil, divided
- 1 small shallot, minced (about 2 tablespoons)
- 2 medium cloves garlic, minced (about 2 teaspoons)
- 1/2 teaspoon dijon mustard
- 2 tablespoons white wine vinegar or red wine vinegar
- Freshly ground black pepper
- 1/2 cup packed basil leaves, roughly chopped
Salad - Qunioa, Blackberry, Feta and Pistachio Salad

Combine the qunioa, blackberries, feta and pistachios in a large salad bowl
- Serves 4
- 2 cups cooked quinoa
- 2 cups blackberries
- 1/2 cup crumbled feta
- 1/2 cup shelled pistachios
- 2 Tbsp. cider vinegar
- 1 Tbsp. maple syrup
- 2 Tbsp. Dijon mustard
- 1/4 cup olive oil
- 1/4 tsp. cinnamon
Pasta -Linguine with Italian Tuna and Cherry Tomatoes

- 2 pints (750 gr) Cherry Tomatoes Halved
- 8 green onions thinly sliced
- 3 cloves of garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- Salt and Pepper
- 1 lb linquine
- 6 oil packed sundried tomatoes thinly sliced
- 1/4 cup capers drained
- 2 cans oil packed Italian tuna (A MUST or don't bother)
Prime Rib Sliders with Caramelized Onions and Horseradish Cream

- Caramelized Onions:
- 1 - 4.5 lb prime rib roast
- Rosemary Garlic Butter
- 1 cup butter
- 7 cloves garlic, minced
- 3 tbsp fresh chopped rosemary
- 1 tbsp fresh chopped thyme
- 2 tbsp salt
- 1 tbsp pepper
- 4 large sweet onions halved and cut thinly
- 1/4 cup butter
- 1/4 tsp salt
- fresh ground pepper
- 3 - 4 tbsp balsamic vinegar
- 3 - 4 tbsp brown sugar
- 6 fresh rosemary stems
- 2 bay leaves
- Horseradish Cream Sauce:
- 2 tbsp prepared horseradish
- 1/4 cup sour cream
- 2 tsp Worcestershire sauce
- 2 tsp Sriracha
Salad - Barley Salad

For vinaigrette whisk together all ingredients
- Vinaigrette:
- 2/3 cups pearl barley
- 1.5 cups chopped trimmed green beans
- 1 cup grape tomatoes, halved
- 1/4 cup finely minced red onion
- 2 tbsp chopped fresh basil
- 1/4 cup extra-virgin olive oil
- 2 tbsp red or white wine vinegar
- 1 tbsp Dijon mustard
- 1/2 tsp dried Italian herb seasoning
- 1/4 tsp salt and pepper
