  • ½ medium onion, chopped
  • 1 clove garlic, minced
  • ¼ tsp (1 mL) salt (or to taste)
  • ¼ tsp (1 mL) pepper
  • 1 cup (250 mL) milk
  • ½ cup (125 mL) chicken broth
  • 1 tbsp (15 mL) all-purpose flour
  • 6 cups (1.5 L) baby spinach leaves, lightly packed (about ½ of a 284 g bag)
  • ¼ cup (50 mL) grated Parmesan cheese (plus more for serving at the table)
