Pasta - Creamy Pasta and Sausage

Great Weeknight Dinner
- 1 lb (500 g) rigatoni pasta (or penne, if preferred)
- 1 lb (500 g) uncooked Italian sausages, mild or hot
- ½ medium onion, chopped
- 1 clove garlic, minced
- ¼ tsp (1 mL) salt (or to taste)
- ¼ tsp (1 mL) pepper
- 1 cup (250 mL) milk
- ½ cup (125 mL) chicken broth
- 1 tbsp (15 mL) all-purpose flour
- 6 cups (1.5 L) baby spinach leaves, lightly packed (about ½ of a 284 g bag)
- ¼ cup (50 mL) grated Parmesan cheese (plus more for serving at the table)
Turkey - Paula's Turkey Burgers

- 4 lbs ground turkey breast
- 1 ⁄4 cup thinly sliced scallion
- 1 ⁄2 cup finely chopped celery
- 3 granny smith apples, peeled and diced
- 1 ⁄8 cup canola oil
- 2 teaspoons TABASCO® brand Chipotle Pepper Sauce
- 1 lemon, juice of, after zest is grated
- 1 ⁄2 bunch parsley, finely chopped
- 1 ⁄4 cup major grey's chutney, pureed

- 1/2 cup seasoned flour
- 6 Tbsp. oil
- 2 cups sliced fresh mushrooms

- 1 – 10 oz. can mushroom soup
- 1/2 cup chicken broth
- 1/2 cup orange juice
- 1/2 cup dry white wine (or vermouth)
- 1 Tbsp. brown sugar
- 1/2 tsp. salt
- 4 carrots, sliced

- 2 cups (500 mL) orzo pasta
- 1/4 cup (60 mL) lemon juice
- 1/4 cup (60 mL) extra-virgin olive oil
- 1 tsp (5 mL) liquid honey
- 1/2 tsp (2 mL) salt
- 1/2 tsp (2 mL) pepper
- 1 pinch dried oregano
- 1 sweet red pepper diced
- 1 cup (250 mL) diced cored English cucumber
- 3/4 cup (175 mL) crumbled cow's milk feta cheese
- 1/3 cup (75 mL) chopped pitted Kalamata olives
- 1/3 cup (75 mL) chopped drained oil-packed sun-dried tomatoes
- 1/4 cup (60 mL) chopped fresh parsley
- 1/4 cup (60 mL) diced red onion
Beef Satay with Peanut Sauce

Kids love this one, great with rice and green beans
- 2 - 3 flank steaks (marinating steaks)
- 20 bamboo skewers
- Marinade
- 2 cloves of garlic (mashed)
- 1/4 cup chopped cilantro
- 3 tbsp brown sugar
- 2 tsp ground coriander
- 1/3 cup soy sauce
- 1/4 lime juice
- 4 tbsp sunflower oil
- Peanut Sauce
- 1 cup milk
- 1 tbsp lemon juice
- set aside for 5 minutes to make buttermilk
- 1 tsp dry mustard
- 6 tbsp peanut butter
- 1/2 tsp ginger
- 4 tbsp soy sauce
- 1/2 tsp minced garlic
- 1 tsp turmenic
Side - Quinoa and Veggies

Bring the quinoa, water, and 1 pinch of salt to a boil in a saucepan

- 3 cups water
- 1 pinch salt
- 3 tablespoons olive oil

- 1 red bell pepper, chopped
- 1/2 cup corn kernels
- 1/2 teaspoon cumin
- 1 teaspoon dried oregano
- salt and pepper to taste
