Salad - Tomato, Cucumber & Quinoa Salad

Add Feta for some extra flavor
- 1/2 cup quinoa
- 3 tablespoons olive oil
- 2 tablespoons sherry vinegar or red wine vinegar kosher salt and black pepper
- 1/2 pound tomatoes, cut up
- 1/2 English cucumber, sliced
- 4 cups baby arugula
- 1/2 cup crumbled feta (optional)

- Ingredients:
- A delicious and colorful stir-fry. Serve over rice on a large platter or take the wok right to the table.
- Sauce
- 1/2 cup ketchup
- 4 tsp. soy sauce
- 1/2 tsp. salt
- 2 Tbsp. Worcestershire sauce
- 3 Tbsp. sugar
- 1 1/2 tsp. sesame oil
- 1/4 tsp. cayenne pepper
- 1/2 cup chicken broth
- The Rest
- 2 Tbsp. cornstarch
- 1/2 tsp. sugar
- 1/4 tsp. salt
- 3 whole boneless, skinless chicken breasts, cut into cubes
- 1/4 cup oil
- 2-3 Tbsp. minced fresh ginger
- 1 Tbsp. minced garlic
- 1 small onion, thinly sliced
- 2 red peppers, cut in strips
- 2 carrots, thinly sliced on diagonal
- 2 cups snow peas
- 1 1/2 cups cashews
- sprinkling of sesame seeds, toasted
Chicken - Stuffed Cypriot

Great flavors, kid friendly and works for a casual dinner with friends
- A small bunch of Italian parsley
- A small bunch of Fresh basil
- 8 jarred sundried tomatoes packed in oil
- 2 garlic cloves
- 4 ounces feta or goat cheese
- Zest of one lemon
- 4 x 6 ounce chicken breast skin on and bone in if you like
- 4 sprigs of rosemary
Pasta -Beef and Mushroom Ragù With Pappardelle

Cook the pasta according to the package directions; drain and return it to the pot
- Ingredients
- 1/2 pound pappardelle or fettuccine
- 2 tablespoons olive oil
- 10 ounces button mushrooms, quartered
- 1/2 medium onion, chopped
- 2 cloves garlic, chopped
- kosher salt and black pepper
- 1/2 pound ground beef
- 2 tablespoons tomato paste
- 1/4 cup dry white wine
- 1 14.5-ounce can diced tomatoes
- grated Parmesan, for serving
Fish - Indian Spiced Roast Salmon

Do not fear the curry paste in this recipe - the amount will give the dish flavour not heat
- 3 tbsp vegetable oil
- 1 tbsp curry paste (Madras or mild)
- 1 tbsp peeled and grated fresh ginger
- 2 tsp finely chopped garlic
- 1 tbsp finely chopped fresh mint
- 2 lb salmon filet
- Salt to taste

- 2 cups uncooked penne pasta
- 1/4 cup butter, cubed
- 1 large onion, chopped
- 1/4 cup all-purpose flour
- 1 can (14-1/2 ounces) reduced-sodium chicken broth
- 3 cups cubed rotisserie chicken
- 1 jar (7-1/2 ounces) marinated quartered artichoke hearts, drained
- 1 cup (4 ounces) crumbled feta cheese
- 1/2 cup chopped oil-packed sun-dried tomatoes
- 1/3 cup sliced pitted Greek olives
- 2 tablespoons minced fresh parsley
Marinade - Lisa's Flank Steak

- 5 tbsp soy sauce
- 2 tbsp sugar
- 3 tbsp rice wine ving
- 2 tbsp sesame oil
- 1 tbsp minced garlic
- 11/2 tbsp grated ginger
- 1 cup finely chopped sambal oelek or fresh ground chili paste(i left out cuz of kids)
- 1 cup finely choppped scallions
- 1/4 cup fresh cilantro
- refrigerate 3-4 hours
