Sides - Crispy Salt & Vinegar Potatoes

Combine potatoes, 1 cup vinegar, and 1 tablespoon kosher salt in a medium saucepan; add water to cover by 1"
- 2 pounds baby Yukon Gold potatoes, halved, quartered if large
- 1 cup plus 2 tablespoons distilled white vinegar
- 1 tablespoon kosher salt, plus more
- 2 tablespoons unsalted butter
- Freshly ground black pepper
- 2 tablespoons chopped fresh chives
- Flaky sea salt (such as Maldon)
Turkey Meatballs

staple....and always enough for lunches the next day
- 1 small onion finely chopped
- 1 medium carrot finely chopped
- handful of arugula finely chopped
- 1 clove garlic, minced
- 3/4 c. grated Parmesan
- 2 tsp dried basil
- 2 tsp dried oregano
- 3/4 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- 1/4 tsp. crushed red pepper flakes
- 1 lb. ground turkey (at least 90% lean)
- 2 large egg whites
- 1/4 c. old-fashioned or quick-cooking oats
- large jar of marinara sauce
Fish - Crispy Fish Fillets with Tartar Sauce

- Tartar Sauce:
- 1 tbsp (15 mL) vegetable oil
- 1 egg
- 2 tsp (10 mL) Dijon mustard
- 1 cup (250 mL) panko bread crumbs
- 1/4 tsp (1 mL) each of salt and pepper
- 4 (1-1/2 lb/750 g total) catfish fillets or tilapia fillets
- 1/4 cup (50 mL) light mayonnaise
- 2 tbsp (25 mL) dill pickle relish
- 1 tsp (5 mL) drained capers
- 1 pinch pepper
Side - Stir Fried Brown with Nori & Sesame Seeds

- 2 tablespoons extra virgin olive oil
- 3 cups day-old Perfectly Cooked Brown Rice
- Coarse sea salt
- 3 sheets toasted nori seaweed
- 1 1/2 teaspoon toasted sesame oil
- 1 1/2 teaspoon soy sauce or Tamari
- 1 1/2 teaspoon toasted black sesame seeds
- 3 scallions, white and light green parts only, thinly sliced
Side -Mushroom Risotto

- Risotto:
- 1 cup (250 mL) boiling water
- 1/2 cup (125 mL) dried porcini mushrooms
- 8 oz (250 g) mixed fresh wild mushrooms
- 2 tbsp (25 mL) olive oil
- 2 tbsp (25 mL) butter
- 1 tsp (5 mL) chopped garlic
- Salt and freshly ground pepper
- 2 tbsp (25 mL) chopped parsley
- 5 cups (1.25 L) chicken stock, approximately
- 2 tbsp (25 mL) olive oil
- 2 tbsp (25 mL) butter
- 1/2 cup (125 mL) finely chopped onion
- 1 1/2 cups (375 mL) Carnaroli or arborio rice
- 1/2 cup (125 mL) white wine
- 1/3 cup (75 mL) grated Parmesan cheese
- Salt and freshly ground pepper

- 1 x approximately 1.6kg chicken, preferably free-range, organic or higher welfare
- • 2 medium onions
- • 2 carrots
- • 2 sticks of celery
- • 1 bulb of garlic
- • olive oil
- • sea salt and freshly ground black pepper
- • 1 lemon
- a small bunch of fresh thyme, rosemary, bay or sage, or a mixture
- I’m going to suggest that you buy free-range or organic. But if you’re a little tight for cash, the RSPCA Freedom Food chickens are very good and available in all good supermarkets.
Salad - Grilled Caesar

- 1 small Sensations by Compliments Ciabatta Bread
- 1/2 cup Compliments Balance Caesar Dressing & Dip 125 mL
- 8 slices Compliments Fully Cooked Bacon, 50% Less Salt
- 4 Compliments Organic Romaine Hearts, cut in half lengthwise
- 8 slicesslices Parmesan cheese

- 3/4 oz. dried porcini or dried shiitake mushrooms
- 2-1/2 to 3 cups homemade or low-salt chicken broth
- 2 Tbs. extra-virgin olive oil
- 1 small red onion, finely diced
- Kosher salt and freshly ground black pepper
- 1/2 lb. dried elbow macaroni
- 1 cup frozen peas
- 1/2 cup grated Parmigiano-Reggiano
- 2 Tbs. unsalted butter
- Grated zest of 1 lemon
- 12 fresh basil leaves, torn into large pieces
Fish - Gwyenth's Salmon

- 2 tbsp cooking sherry or mirin
- 3 tbsp honey
- 1/3 cup water
- 1 tsp peeled and finely grated ginger
- 2 sprigs fresh cilantro
- 4 6-ounce salmon fillets (I like the salmon cut into bit size pieces before marinating)
