New - Rainbow Power Salad

Preheat the oven to 400 degrees Fahrenheit
- 5 Minute Magic Green Sauce for dressing
- 3 large tri-color carrots (I used one orange, one red, and one yellow)
- 1 medium zucchini
- 1/4 cup fresh basil, cut into ribbons
- 1 can chickpeas, rinsed and drained
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- generous sprinkling of salt and pepper
Tofu - HONEY GINGER TOFU AND VEGGIE STIR FRY

my kids favourite...double it for lunches
- For stir fry sauce
- 2 cloves garlic
- 2 tablespoons fresh ginger
- 2 tablespoons honey (more to taste)
- 1/2 cup low sodium soy sauce
- 1/4 cup water
- 1/4 cup rice wine vinegar
- 1/4 cup canola oil
- For the stir fry
- 1 1/2 cup uncooked brown rice or farro
- 2 tablespoons canola oil
- 2 pkgs extra firm tofu
- 2 cups chopped asparagus or green beans
- 2 cups shredded carrots
- 3 green onions, minced
Salad - Crispy Goat Cheese, Tomato and Basil

Great for company
- all purpose flour for dusting
- 1 cup dry bread crumbs ( i like using panko)
- 8 oz goat cheese sliced
- 2 eggs, lightly beaten
- 2 tbsp olive oil
- 2 vine ripened tomatoes sliced
- 1 cup fresh basil leaves
- 1 bunch arugula trimmed
- Dressing
- 1/4 cup olive oil
- 1 tbsp balsamic vinegar
- 1 tsp superfine sugar
Superfood Salad

lots of chopping but worth it!
- 2/3 cup raw cashews
- 3/4 cup water
- 1/4 cup lemon juice
- 1 1/2 tsp Dijon mustard
- 3/4 tsp honey
- 1/2 tsp salt
- fresh pepper
- 1 bunch kale, thinly sliced (about 8 cups)
- 1/4 cup chickpeas, drained and rinsed
- 1 cup grated carrot (buy the julienned ones)
- 2 gala apples, finely chopped (about 3 cups)
- 1 avocado, finely chopped
- 1/3 cup dried cherries (or dried figs)
- 1/4 cup pepitas
Marinade - Honey Balsamic for Chicken or Pork

Mix all ingredients in bowl
- 2 tbsp (25 mL) liquid honey
- 2 tbsp (25 mL) grainy mustard
- 2 tbsp (25 mL) balsamic vinegar
- 1 tbsp (15 mL) olive oil
- 1 clove garlic, minced
- 1/4 tsp (1 mL) salt
- 1/4 tsp (1 mL) pepper
Breakfast Cookie

You will want to double this one!! It makes 10 large cookies
- 1 really ripe banana
- 1 egg
- 1/2 cup natural almond or natural peanut butter
- 1/3 cup maple syrup
- 1/2 tsp vanilla extract
- 1 cup Spelt flour
- 1 cup old-fashioned oats
- 1/2 cup shredded unsweetened coconut
- 1/4 cup ground flax
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- (for more moist cookies add 2 tbsp of unsweetened apple sauce)
Side - Fried Rice with Kale and Scallions

makes a great lunch or side
- You need cooked brown rice for this
- Double this, you'll want some left over for the fridge
- 1/2 pound kale, stems discarded
- 2 tbsp vegetable oil
- 2 cloves garlic finely minced
- 4 large scallions cut into 1/8 inch diagonal slices
- 3 cups cooked brown rice
- 1 1/5 tbsp soy sauce
Farro Salad with Beets and Feta

Bring 2 quarts water to a boil in a medium saucepan
- 2 medium or 3 small beets (any color) with greens, the beets roasted, the greens stemmed and washed in two changes of water
- 1 cup farro, soaked for one hour in water to cover and drained
- Salt, preferably kosher salt, to taste
- 2 tablespoons sherry vinegar
- 1 teaspoon balsamic vinegar
- 1 small garlic clove, minced or pureed
- 1 teaspoon Dijon mustard
- 1/2 cup extra virgin olive oil (may substitute 1 to 2 tablespoons walnut oil for 1 to 2 tablespoons olive oil)
- 1/2 cup broken walnut pieces
- 2 ounces feta or goat cheese, crumbled (more if desired for garnish)
- 1/4 cup chopped fresh herbs, such as parsley, tarragon, marjoram, chives, mint
Baking - Chocolate Chip

Preheat oven to 350 degrees F (175 degrees C)
- 1 cup butter, softened
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons hot water
- 1/2 teaspoon salt
- 2 cups semisweet chocolate chips
- 1 cup chopped walnuts or pecans (toasted is the best)
Salad - Honey Lime Oat and Black Bean Salad

In large saucepan, bring 2 cups water to boil; add groats
- Honey-Lime Vinaigrette:
- 1 cup (250 mL) oat groats
- 1 cup (250 mL) drained rinsed canned black beans
- 1 cup (250 mL) halved cherry tomatoes
- 1 jalapeño pepper, seeded and finely chopped
- 2 tbsp (30 mL) finely chopped red onion
- 1/2 ripe avocado, pitted, peeled and diced
- 1 tbsp (15 mL) choppedf fresh cilantro
- 3 tbsp (45 mL) vegetable oil
- 1 tsp (5 mL) grated lime zest
- 3 tbsp (45 mL) lime juice
- 1 tbsp (15 mL) liquid honey
- 1/4 tsp (1 mL) chili powder
- 1/4 tsp (1 mL) salt
- 1/4 tsp (1 mL) pepperPreparation
