Pasta - Mom's Lasagna

- 1/4 cup EVOO
- 3 tablespoons white wine vinegar
- 2 tablespoons tarrago leaves
- 2 teaspoons Dijon mustard
- 1 pint grape tomatoes, halved
Main/Side - Creamy Barley Risotto /w Asparagus & Pocini

Barley turns this risotto into a hearty satisfying main course
- 1 pkg (14 g) dried porcini mushrooms
- 2 tbsp (25 mL) unsalted butter
- 1 onion, finely chopped
- 1/2 tsp (2 mL) freshly ground black pepper
- 1 cup (250 mL) pearl barley
- 1/2 cup (125 mL) dry white wine
- 4 cups (1 L) homemade or low-sodium vegetable or chicken stock
- 1 lb (500 g) thin asparagus spears
- 1/2 cup (125 mL) crumbled fresh soft cheese with garlic and herbs (such as Boursin)
- 1/4 cup (50 mL) snipped fresh chives
- Salt to taste

- 1 large shallot chopped
- 1 pint cherry or grape tomatoes halved
- 5 basil leaves torn
- salt and pepper

- 1/2 cup panko
- 1/4 cup grated parmesan
- 1 egg lightly beaten
- course black pepper
- 4 6 ounce halibut fillets
- Store bought balsamic drizzle for topping
