Side - Green Beans with Almandine Crumbles

This recipe makes more crumbles than are needed
- 1 to 2 kaiser or Italian rolls
- 1 tbsp (15 mL) finely chopped fresh parsley
- 1 tsp (5 mL) lemon zest
- 1/4 tsp (1 mL) salt
- 1/4 tsp (1 mL) freshly ground black pepper
- 2 tbsp (25 mL) olive oil
- 1 large clove garlic, minced
- 1 cup (250 mL) sliced almonds
- 1/2 cup (125 mL) fi nely shredded Parmesan cheese
- 1 to 1 1/2 lbs (500 to 750 g) thin French green beans or a mixture of ordinary green and yellow wax beans
- 1 to 2 tbsp (15 to 25 mL) butter
Fish - Mint Cured Salmon

Great for entertaining, good at room temp too
- 4 4 4 salmon fillets
- 1/2 1/2 1/2 cup brown sugar
- 1/4 1/4 1/4 cup soy sauce
- 1/4 1/4 1/4 cup water
- 2 2 2 Tbsp lemon juice
- 2 2 2 Tbsp grated fresh ginger
- 1/2 1/2 1/2 mint leaves chopped
Fish - Soba Salad & Teriyaki Black Cod

Great easy one dish dinner
- Dressing (this makes alot, pour half over salad and extra a bowl.....could even half it)
- 1/2 pound soba noodles or whole wheat spaghetti
- 1/4 cup teriyaki sauce
- 1/4 cup honey
- 1/4 cup vegetable oil
- 2 tablespoons sherry vinegar
- 1 piece fresh ginger (1 1/2 to 2 inches), grated
- 2 large cloves garlic, grated
- Sesame oil, for drizzling
- Salad
- 2 cups napa cabbage shredded
- 1 cup thawed frozen shelled edamame
- 5 scallions, thinly sliced on an angle
- 3 tablespoons sesame seeds, toasted
- Fish
- 4 fillets black cod or other white-fleshed fish
- 1/4 cup mayonnaise or Vegenaise
- 2 tablespoons teriyaki sauce
- 1 teaspoon wasabi paste
Summer Grilled Vegetable Platter

Great for a summer BBQ
- 3 sweet bell peppers, seeded and quartered
- 1 large zucchini sliced diagonally 1/2 inch thick
- 1 bunch of asparagus, woody ends trimmed
- 1 large sweet onion peeled and cut into 8 wedges with root still attached
- 2 large hothouse tomatoes quartered
- 1/4 cup extra virgin olive oil
- 1/2 tsp salt
- freshly ground pepper
- 2 tbsp pesto
- 1 tbsp red wine vinegar
- 125 ml goat cheese grumbles
- (really good with a pkg of the Sundried Tomatoes & Basil Goat Cheese Crumble)
Chicken - 20 Minute Chicken Linguine

Cut chicken crosswise into strips; season with half each of the salt and pepper
- 2 boneless skinless chicken breasts
- 3/4 tsp (4 mL) salt
- 3/4 tsp (4 mL) pepper
- 3 tbsp (45 mL) extra-virgin olive oil
- 2 cups (500 mL) cherry tomatoes
- 1 small onion, sliced
- 8 garlic cloves, sliced
- 1 tsp (5 mL) dried oregano
- 2 cups (500 mL) coarsely shredded, firmly packed radicchio leaves or whole spinach leaves, (firmly packed)
- 4 green onions, sliced
- 12 oz (340 g) linguine pasta
- 1/4 cup (60 mL) grated Parmesan cheese
Turkey - Turkey Lettuce Wraps

Love these!
- 2 lbs lean ground turkey or chicken
- 1/2 cup chopped onion
- 2 red pepper diced
- 2 carrots peeling and grated
- 1 - 8 ounce can water chestnuts chopped
- 1 clove garlic, mashed
- 4 green onions chopped
- 1 lg or 2 small heads of iceberg lettuce
- Asian Sauce
- 3/4 cup hoisen sauce
- 1/2 tbsp rice vinegar
- 1 tbsp liquid honey
- 1 tbsp fresh lime juice
- 1/2 tbsp sesame oil
- 1 small garlic clove mashed
- 1 tsp fresh grated ginger
- Add steam fried noodles to each wrap (asian section) for an extra crunch
Side - Rainbow Chard with Pine Nuts, Parmesan, and Basil

- 13 to 14 oz. Rainbow chard (about 1 large bunch)
- 1 Tbs. extra-virgin olive oil
- 3 Tbs. pine nuts or pistachoes
- Kosher salt
- 1 Tbs. minced garlic
- 1 Tbs. cold unsalted butter, cut into 4 pieces
- 1/4 cup grated Parmigiano-Reggiano
- 1/4 cup thinly sliced fresh basil leaves (8 to 10 large)
Salad -Toasted Corn, Cherry Tomato & Edamame

Cook the edamame according to package directions
- 1 cup frozen shelled edamame
- 5 Tbs. extra-virgin olive oil
- 2-1/4 cups fresh corn kernels (from about 3 medium ears)
- 2 Tbs. plain low-fat yogurt
- 2 Tbs. fresh lemon juice
- 1 tsp. clover honey
- 1/2 tsp. minced garlic
- Kosher salt
- Freshly ground black pepper
- 1 heaping cup quartered cherry tomatoes (about 15)
- 1/4 cup very thinly sliced fresh mint
- 1/4 cup very thinly sliced fresh basil
Soup - Turkey

n a large dutch oven, combine turkey carcass, water, bouillon cubes, salt, poultry seasoning and bay leaf
- Left Over Turkey Carcass (bones, skin and everything)
- 8 cups of water
- 3 chicken bouillon cubes
- 1 tsp salt
- 1/4 tsp poultry seasoning or sage
- 1 bay leaf
- 1/2 cup barley
- 2 cups chopped carrots
- 1 cup chopped onion
- 1 cup chopped celery
- 28 oz can tomatoes
- 3 cups chopped turkey
- 1 cup macaroni or noddles uncooked (optional)
- 1/4 cup chopped fresh parsely
Baking - Oatmeal Chocolate Chip Cookies

The Best Ever Oatmeal Cookies!
- 1 cup butter(250gram brick), room temperature
- 1 cup sugar
- 1 cup brown sugar
- 2 large eggs
- 2 tbsp milk
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 1/2 cups oats (large flake not "quick," or "instant")
- 2 cups chocolate chips (about 12-oz.)
