- 1/4 cup vegan palm oil shortening
- 2 tablespoons honey
- 1 tablespoon vanilla extract

Pumpkin Pancakes

Stir together the flour, sugar, baking powder, cinnamon, ginger, salt, nutmeg and cloves in a medium bowl
- 1 1/4 cups all-purpose flour GF with xanthan gum)
- 2 tablespoons coconut palm sugar
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/8 teaspoon nutmeg
- 1/8 teaspoon ground cloves
- 1 cup almond milk
- 6 tablespoons pumpkin puree
- 2 tablespoons butter, melted
- 1 egg
Baby and Toddler Friendly Muffins

- 2 ripe bananas
- 1 cup of grated apple
- 1/4 cup of apple juice {I used juice that I made}
- 1/2 cup of frozen wild blueberries
- 2 cups of flour {see below for substitutions}
- 1 egg
- 1/4 cup of melted butter
- 1 tbsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- Substitutions:**
- all purpose flour = gluten free flour = rice flour
- egg = binding agent
- apple and apple juice = crushed pineapple and pineapple juice
- note that I used all organic ingredients but you don’t have to.
Paleo Waffles

I always make a huge batch, then keep them in the fridge
- 1 cup almond flour
- 1/3 cup coconut flour, sifted
- 8 eggs, 4 separated, whites beaten to stiff peaks
- 1/2 teaspoon sea salt
- 1/2 teaspoon baking soda
- 2 tablespoons maple sugar (optional)
- 2 teaspoons vanilla
- 2/3 coconut milk

- 3-1/2 cups icing sugar
- 1-1/2 cups chunky peanut butter
- 1 tsp vanilla
- 2 tbsp oil

My Green Smoothie

Place all ingredients in your Blendtec (or other blender)
- 1 cup water
- juice of 1 lemon
- slice of fresh peeled ginger
- 1/2 cucumber, peeled
- handful of fresh parsley
- 2 handfuls of spinach
- 2 sticks of kale, stems remove
- 1/2 green banana (I used green so it was less sugary)
- handful of ice

Lemon Chicken
- 2 tbsp. lemon zest
- 1/3 cup freshly squeezed lemon juice
- 2 cloves garlic, crushed
- 2 tsp. fresh thyme leaves
- 1 tsp. fresh rosemary leaves, finely minced
- 1 tsp. salt
- 1 tsp. black pepper
- 2-4 lbs. of bone-in, skin-on chicken thighs or drumsticks
- 2-3 tbsp. melted butter
- Thinly sliced lemons, for garnished
