Vegetables: Vegetable Tart

1. Heat an oven proof fry pan
- 1 large white onion, thinly sliced
- 1/2 large zucchini, thinly sliced
- 1/2 large yellow squash, thinly sliced
- 1 large ripe beefsteak tomato, thinly sliced
- Maintain circular shape of all vegetables
- 4 ounces fresh chicken stock or canned low-sodium chicken broth
- 1/2 tablespoon fresh rosemary, chopped
- 1/2 tablespoon fresh thyme, chopped
- 1/2 tablespoon fresh parsley, chopped
- 1/2 teaspoon fresh ground black pepper
- 1 tablespoon fresh grated Parmesan cheese
- Dried herbs can be substituted; use half the quantity
Beef: London Broil

Broil steak to desired doneness
- 4 pounds London Broil steak
- 1 8 oz can mushroom sauce
- 1/4 cup cilantro, chopped
- 1 T fresh rosemary, chopped
- 1 oz sherry

Sift dry ingredients together Beat in oil
- 2 cups plain flour
- 1 t salt
- 1 t soda
- 1 t cinnamon
- 1 t cloves
- 1 t nutmeg
- 1 1/2 cup sugar
- 1 cup oil
- 3 eggs
- 1 cup buttermilk
- 1 cup fig preserves
- 1/2 cup strawberry preserves
- 1 cup chopped pecans
- 1 T vanilla flavoring
- Topping
- 1 cup sugar
- 1 T Karo syrup
- 1/2 cup buttermilk
- 1 stick butter
- 1 t soda
- 1 t vanilla

- 2 % milk

- In food processor finely pulse
- 1/2 bag tortilla chips
- 2 T cumin
- 1 T coriander
- 4 boneless chicken breasts

- 1/4 cup of Crisco (large rounded mixing spoon)
- 2 cups sugar
- 1 t vanilla
- 2 whole eggs
- 1/2 cup sour cream
- Dash of salt
- 2 cups sifted flour
- 3 T cocoa
- 1 t soda, rounded
- 1 cup boiling water
- Icing
- 3/4 4X sugar
- 2 T butter
- 2 T cold, brewed coffee
- 2 1/2 T cocoa
Soups: L. L. Bean Harvest Squash and Mushroom Soup

If using fresh squash, preheat oven to 375 degrees
- 3 cups cooked butternut squash (fresh or frozen)
- 2 T butter, melted
- 1/2 cup diced onion
- 2 cloves crushed garlic
- 1 1/4 t salt
- 1/2 t ground cumin
- 1/2 t coriander
- 1/2 t cinnamon
- 3/4 t ground ginger
- 1/4 t dry mustard
- Pinch or two of cayenne
- 8 oz diced mushrooms
- 2 1/2 cups chicken stock
- Your choice of yogurt
- Toasted almonds

- 1/4 cup brown sugar

- 5 cups white flour
- 1 cup whole wheat
- 1 cup rye (cracked wheat or rye)
- May add bran, bran flakes and a handful of wheat germ

- Add
- Double amount of sugar or honey
- 2 eggs
- 1 T additional yeast
