Spinach & Shrimp Salad with Chile Dressing

In large bowl, toss spinach, peas & tomatoes
- 8 C baby spinach
- 1 C frozen baby peas, thawed
- 1/2 C halved grape tomatoes
- 1/4 C + 2 T olive oil
- 1 finely chopped onion
- 1 minced jalapeño
- 1 t minced ginger
- 1/2 t cumin seed
- 1/4 t tumeric
- 2 1/2 T lemon juice
- Salt & pepper
- 1 lb cooked shrimp
Fried Green Tomatoes with Pickled Shrimp & Ranch Dressing

Delicious Southern cooking dish
- For Pickled Shrimp: (make a day ahead)
- 2 T Old Bay seasoning
- 1 lb. peeled shrimp
- 1/4 t celery seeds
- 1/4 t ground allspice
- 1/2 t red pepper flakes
- 1 T sea salt
- 1 C olive oil
- 1/3 C lemon juice
- 6 fresh bay leaves or 2 dry
- 1/4 C minced Italian parsley
- 1/2 thinly sliced Spanish onion
- For Fried Green Tomatoes: (can substitute tomatillos)
- 12 slices 1/3" thick green tomato slices (@ 3 tomatoes)
- 1/4 t Kosher salt
- 1 C flour
- 3 beaten eggs with 1/4 C cold water
- 1 C fine yellow cornmeal
- 1/4 C olive oil
- 1/2 C ranch dressing
- 1 lb. shrimp from above recipe
- 1 handful arugula
Shrimp & White Bean Stew

Heat olive oil in large casserole
- 2 T olive oil
- 1 finely chopped med. onion
- 3 cloves crushed garlic
- 3 C cannellimi beans
- 14 oz. crushed tomatoes
- 1 t salt
- 1/2 t rosemary
- 1/2 t pepper
- 4 C chicken broth
- 1 lb. shrimp
- 1/4 chopped parsley
Tomato, Avocado, Corn & Black Bean Salad

Very Good. Serve with grilled chicken or pork
- 2 ears fresh corn
- 1 small red onion
- 5 T olive oil
- Kosher salt
- 1 t. cumin seeds
- 1/4 C lime juice
- 1 t. minced jalapeno
- 4 med-lge tomatoes, cored, seeded & cut into 1" chunks
- 1/2 C drained black beans, rinsed
- 1/2 loosely packed chopped cilantro
- 1 avocado, diced
- Freshly ground pepper
- 1 scallion, diagonally sliced
Kalamata Tapenade

Soak tomatoes in boiling water to cover 2 min
- 8 dried tomato halves
- 1/2 oz. minced prosciutto
- 2 t capers, chopped
- 2 t orange all fruit spread
- Pepper
- 20 Kalamata olives, chopped
- 1 t chopped parsley
- 1 crushed garlic clove
- 1 t lemon juice
- sliced baguette
Tomato Salad with Pickled Onion

In med bowl, toss onion with lime juice oil & 1/2 t salt
- 1 med. red onion, halved & thinly sliced
- 3 T lime juice + finely grated zest of 1 lime
- 3 T olive oil
- Kosher salt
- 4 large tomatoes, sliced
California Gazpacho

In large bowl mix tomatoes with garlic
- 1 clove minced garlic
- 3 lbs. tomatoes, peeled & chopped
- 2 cucumbers, peeled, seeded & diced
- 1/2 C minced green pepper
- 1 minced jalapeno
- 1/2 C minced onion
- 2 C V-8 juice
- 1/3 C olive oil
- 3 T vinegar
- Salt & pepper
- 1/4 t hot pepper sauce
Warm Beet-Onioon Salad

Scrub beets. Lightly spray or brush with olive oil
- Dressing:
- 2 med. golden beets
- 2 med. red beets
- 1 med. orange
- 1/3 C olive oil
- 2 T red wine vinegar
- 1 T finely chopped basil
- 1 t minced garlic
- 1/2 t kosher salt
- Freshly ground pepper
- 1 large red onion cut into 4 1/2" slices
- 2 hearts of romain lettuce
Tangy Salt Roasted Fennel

- 2 med. lemons
- 8 med. fennel bulbs, halved lengthwise & cored
- salt & fresh pepper
- 8 small thyme sprigs
- 2 garlic cloves, thickly sliced
- 8 Calamata olives, coarsely chopped
- Olive oil for drizzling
- 1/1 /4 lbs Kosher salt
