Hot Dogs with Green Tomato Relish

Ingredients

  • Relish:
  • 1 lb.green tomatoes, cut into 1/2" dice
  • 1 red bell pepper, cut into 1/2" dice
  • 1 onion, cut into 1/2" dice
  • Kosher salt
  • 1/4 C+ 2 T olive oil
  • 1 C distilled vinegar
  • 1 C light brown sugar
  • 2 dashes crushed red pepper
  • 1/2 t ground cloves
  • 1/2 celery salt
  • 1/2 t ground ginger
  • Hot dogs:
  • 3 C water
  • 1 12oz bottle/can of beer
  • 1 T celery seeds
  • 1 small quartered onion
  • 1 clove smashed garlic
  • 8 all beef hot dogs

Preparation

Step 1

Make relish: In a colander, toss green tomatoes, red bell pepper & onion with 2 T Kosher salt. Let stand 1 hour to drain.
In large deep skillet, heat olive oil. Add drained vegetables & cook over moderate heat, stirring occasionally, until softened, @ 7 min. Add vinegar, brown sugar, crushed red pepper, cloves, celery salt & ginger & simmer until thick, stirring occasionally, @ 25 min. Let cool to room temperature & season with salt.

Prepare hot dogs: In large saucepan, combine water, beer, celery seeds, onion & garlic. Bring to a boil. Put a large steamer basket over boiling water & add hot dogs. Cover & steam 8 min.

Serve hot dogs in buns topped with green tomato relish.
