Spinach & Shrimp Salad with Chile Dressing

Ingredients

  • 8 C baby spinach
  • 1 C frozen baby peas, thawed
  • 1/2 C halved grape tomatoes
  • 1/4 C + 2 T olive oil
  • 1 finely chopped onion
  • 1 minced jalapeño
  • 1 t minced ginger
  • 1/2 t cumin seed
  • 1/4 t tumeric
  • 2 1/2 T lemon juice
  • Salt & pepper
  • 1 lb cooked shrimp

Preparation

Step 1

In large bowl, toss spinach, peas & tomatoes. In med skillet, heat oil. Add onion & cook over mod-hi heat til golden, @ 4 min. Add jalapeño, ginger, cumin & turmeric & cook 2 min. Add lemon juice & season with salt & pepper. Add shrimp to salad. Pour warm chile dressing over all & serve.
