- 4 cloves garlic
- 15 leaves fresh basil
- 1/2 teaspoon freshly ground black pepper

Easy Pesto

This is the easiest pesto recipe, using easy to find ingredients
- 1/4 cup almonds
- 3 cloves garlic
- 1 1/2 cups fresh basil leaves
- 1/2 cup olive oil
- 1 pinch ground nutmeg
- salt and pepper to taste
Quinoa Falafel with Yoghurt Tahini Sauce

Combine all the ingredients in a food processor and purée until the mixture forms a ball in the machine
- 1 Cup Cooked Quinoa
- 1/2 Cup Cooked Garbanzo Beans
- 1-2 Cloves Garlic
- 1/4 Grated Carrot
- 2 Tbsp. Chopped Parsley
- 1 Tbsp. Chopped Mint
- 1 tsp. Lemon Zest
- 1 tsp. Ground Cumin
- 1 Tbsp. Chopped Onion
- 1 tsp. Tahini
- 1/4 tsp. Smoked Paprika
- Sea salt and Black Pepper to taste
Quinoa-veggie burger

1.Cook quinoa according to package directions, omitting salt, about 14 min
- 1/2 cup uncooked quinoa (about 2 cups cooked)
- 1 tsp vegetable oil
- 1/2 227 g pkg cremini mushrooms, coarsely grated (1 cup)
- 1 cup coarsely grated zucchini
- 3/4 cup coarsely grated carrot
- 1 small shallot, minced
- 1 garlic clove, minced
- 1 egg, beaten
- 3 tbsp cornstarch
- 1/4 tsp salt
- 1/8 tsp cayenne pepper

- Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 cups quick-cooking oats
- 1 1/2 cups sugar, divided
- 1/2 teaspoon baking soda

- 2 cups fresh or frozen blueberries
- 2 tablespoons cornstarch
- 2 tablespoons lemon juice

- 1 can (15 oz.) chickpeas

Cheesy Spinach and Mushroom Stuffed Shells

1. Cook shells in boiling water for 9 minutes
- 1/2 box Jumbo Shells
- 1/2 tablespoon butter
- 4 ounces fresh mushrooms, chopped
- 6 ounces fresh baby spinach (small bag)
- 1 clove garlic, crushed
- 1-1/3 cup ricotta cheese
- 8 ounces mascarpone cheese
- 1 cup Parmigiano Reggiano cheese, shredded and divided
- 8 ounces mozzarella cheese, shredded and divided
