Perfect Sushi Rice

Here is my recipe for the perfect sushi rice
- 2 cups uncooked glutinous white rice (sushi rice)
- 3 cups water
- 1/2 cup rice vinegar
- 1 tablespoon vegetable oil
- 1/4 cup white sugar
- 1 teaspoon salt
Brazilian Cheese Bread (Pao de Queijo)

These yummy gluten/wheat free breads are good for those with Celiac disease or gluten intolerance
- Ingredients
- 1/2 cup olive oil or butter
- 1/3 cup water
- 1/3 cup milk or soy milk
- 1 teaspoon salt
- 2 cups tapioca flour
- 2 teaspoons minced garlic
- 2/3 cup freshly grated Parmesan cheese
- 2 beaten eggs
Chicken Tortilla Soup

PREHEAT oven to 400°F. Cut tortillas into strips; toss with 1 Tbsp
- 4 flour tortillas (6 inch)
- 2 Tbsp. Kraft Zesty Italian Dressing, divided
- 1/2 lb. (250 g) boneless skinless chicken breasts (about 2 small halves)
- 1 can (19 fl oz/540 mL) chili-style stewed tomatoes, undrained
- 1 can (10 fl oz/284 mL) chicken broth
- 1/4 cup chopped cilantro
- Juice from 1 medium limes
- 1 cup Kraft Tex Mex Shredded Cheese
California Taco Dip

There are many taco bean dips, but this one has a secret ingredient that makes is extra yummy
- Ingredients
- 3 large avocados, peeled and pitted
- 1 teaspoon lemon juice
- 1 cup sour cream
- 2 tablespoons mayonnaise
- 1 (1.25 ounce) package taco seasoning mix (such as Lawry's®)
- 1 (16 ounce) can refried beans
- 1 cup shredded Mexican blend cheese
- 2 chopped green onion tops
- 2 tomatoes, seeded and diced
- 1 (2.25 ounce) can sliced black olives, drained
Quinoa with Veggies

I love quinoa and I wanted to make something that was flavorful and filling
- Ingredients
- 1 cup quinoa
- 3 cups water
- 1 pinch salt
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1/2 cup corn kernels
- 1/2 teaspoon cumin
- 1 teaspoon dried oregano
- salt and pepper to taste
- 2 green onions, chopped
Easy Caramel Sauce

Yields 1 1/2 cups
- 1 packed cup brown sugar
- 1/2 cup half-and-half
- 4 tablespoons butter
- Pinch salt
- 1 tablespoon vanilla extract

FALL DIP

Mix everything together and then add some pumpkin pie spice
- FALL DIP
- {Cool Whip, vanilla pudding mix, and a can of pumpkin}
- You use 16 oz of cool whip
- 3 small boxes instant vanilla pudding *** dry mix only*** DON'T make the pudding***
- one small can of pumpkin
Make-Ahead Spinach Phyllo Roll-Ups

MIX first 5 ingredients until well blended
- 1 egg, beaten
- 1 pkg. (300 g) frozen chopped spinach, thawed, well drained
- 1 cup Kraft Feta with Oregano, Sun Dried Tomatoes and Cracked Peppercorns Cheese
- 1 tub (250 g) Philadelphia Cream Cheese Spread
- 4 green onions, finely chopped
- 15 sheets frozen phyllo dough, thawed
- 1/3 cup butter, melted
BANANA BREAD

An old stand by
- 1/2 cup - 125 ml butter or margarine or oil
- 1 cup - 250 ml brown sugar
- 2 eggs
- 1 cup - 250 ml mashed ripe bananas (3 medium)
- 1 3/4 cup - 425 ml all purpose flour
- 1 tsp - 5 ml baking soda
- 1/2 tsp - 2 ml baking powder
- 1/2 tsp - 2 ml salt
- Chopped walnuts - optional (I add poppy seeds, sunflower seeds & flax seeds)
Braised Chicken Thighs with Button Mushrooms

Set a 10-inch, straight-sided saute pan over medium-high heat and add the oil
- 1 tablespoon olive oil
- 6 chicken thighs
- 1 tablespoon Essence, recipe follows
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter
- 16 ounces button mushrooms, thinly sliced
- 1 cup sliced yellow onion
- 1 tablespoon minced garlic
- 2 tablespoons all-purpose flour
- 2 tablespoons tomato paste
- 2 cups dark chicken stock
- 2 tablespoons coarsely chopped fresh rosemary leaves
- 4 cups steamed white rice
- 2 tablespoons chopped fresh parsley leaves
