- 1/2 cup (125 ml) chopped canned jalapeno peppers
- 3/4 cup (175 ml) sliced black olives
- 1 cup (250 ml) shredded cheddar cheese
- 2 cups (500 ml) shredded iceberg lettuce
- 1 cup (250 ml) sour cream
- 1/2 cup (125 ml) chunky salsa
- 1 large tomato, chopped
Cauliflower And Chickpea Coconut Curry

Heat the coconut oil in a large Dutch oven over medium heat
- 2 tablespoons coconut oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1-inch ginger, peeled and minced
- 1 tablespoon garam masala
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 2 (15-ounce) cans chickpeas, drained and rinsed (or 3 cups cooked chickpeas)
- 2 (14.5-ounce) cans diced tomatoes
- 1 (14-ounce) can coconut milk
- 1 medium head cauliflower, broken into florets
- Salt and pepper to taste
- 1/4 cup chopped cilantro
- Cooked rice or naan for serving

- PAD THAI SAUCE:
- 8 oz. Thai rice noodles (or enough for 2 people), linguini-width, available at Asian/Chinese stores
- 1 to 1 1/2 cups chopped chicken breast or thigh
- Marinade for Chicken: 1 tsp. cornstarch dissolved in 3 Tbsp. soy sauce
- 4 cloves garlic, minced
- optional: 1-2 fresh red chilies, minced
- 3 cups fresh bean sprouts
- 3 green onions, sliced
- 1/2 cup fresh coriander/cilantro
- 1/3 cup crushed or roughly chopped peanuts (or other nuts, such as cashews)
- 1/4 cup chicken stock
- vegetable oil for stir-frying, and wedges of lime
- 3/4 Tbsp. tamarind paste1 dissolved in 1/4 cup warm water (look for tamarind at Asian/Chinese or Indian food stores)
- 2 Tbsp. fish sauce2, + more to taste
- 1-3 tsp. chili sauce, or substitute 1/2 tsp. or more dried crushed chili or cayenne, to taste
- 3 Tbsp. brown sugar
- 1/8 tsp. ground white pepper

- 1 tsp. grated galangal OR ginger
- 1-2 fresh red or green chilies (or as much or little as you like), finely sliced
- 1 egg
- 2-3 cups bean sprouts
- handful fresh coriander/cilantro
- 1/3 cup dry roasted unsalted peanuts, chopped
- 2-3 Tbsp. vegetable oil for stir-frying (e.g. coconut, peanut, corn, sunflower, etc...)
