- Crust:
- 1/4 cup (60 mL) SPLENDA® No Calorie Sweetener, Granulated
- 1 1/4 cups (310 mL) graham cracker or vanilla wafer crumbs
- 1/3 cup (80 mL) light butter, melted
- 1/4 cup (60 mL) toasted sliced almonds, finely ground

- 12 oz (335 g) reduced fat cream cheese
- 1/2 cup (125 mL) SPLENDA® No Calorie Sweetener, Granulated

Black Bean and Salsa Soup

In an electric food processor or blender, combine beans, broth, salsa, and cumin
- 2 (15 ounce) cans black beans, drained and rinsed
- 1 1/2 cups vegetable broth
- 1 cup chunky salsa
- 1 teaspoon ground cumin
- 4 tablespoons sour cream
- 2 tablespoons thinly sliced green onion
Fudgy Maple Flourless Black Bean Brownies

The brownies are a breeze to whip up and come out tasting moist, flavorful and plenty sweet
- 1 (15-ounce) can black beans, drained and rinsed
- 3 large eggs
- 1/3 cup coconut oil, melted (or butter)
- 1/4 cup raw cacao powder (or cocoa powder)
- 1/8 teaspoon sea salt
- 1 teaspoon pure vanilla extract (gluten-free)
- 1/2 cup pure maple syrup

1.Cook quinoa according to package directions, omitting salt, about 14 min
- 1/2 cup uncooked quinoa (about 2 cups cooked)
- 1 tsp vegetable oil
- 1/2 227 g pkg cremini mushrooms, coarsely grated (1 cup)
- 1 cup coarsely grated zucchini
- 3/4 cup coarsely grated carrot
- 1 small shallot, minced
- 1 garlic clove, minced
- 1 egg, beaten
- 3 tbsp cornstarch
- 1/4 tsp salt
- 1/8 tsp cayenne pepper
Baked Sweet and Sour Chicken

Start by preheating your oven to 325 degrees
- The chicken coating:
- 3-4 boneless chicken breasts
- salt + pepper
- 1 cup cornstarch
- 2 eggs, beaten
- 1/4 cup canola oil
- The sweet and sour sauce:
- 3/4 cup sugar
- 4 tbs ketchup
- 1/2 cup distilled white vinegar
- 1 tbs soy sauce
- 1 tsp garlic salt
Garden Pizza

Note: I suggest cooking the carrots, broccoli and cauliflower in the microwave for 8 to 10 minutes on HIGH
- Béchamel pizza sauce:
- 2 tbsp (30 mL) butter
- 2 tbsp (30 g) flour
- 1 cup (250 mL) milk
- Salt and pepper
- Pizza toppings:
- 1 homemade or store-bought pizza dough
- 2 onions, thinly sliced
- 2 carrots, thinly sliced
- 1 1/2 cup (375 mL) broccoli, cut into small pieces
- 1 1/2 cup (375 mL) cauliflower, cut into small pieces
- Grated cheese, to taste
- 1 green pepper, thinly sliced
- Oregano, to taste
Christmas Morning Wife Saver (Breakfast Casserole)

Prepare the day before and refrigerate
- 16 slices bread, with crusts removed(I often use whole wheat)
- 8 slices of sharp Cheddar Cheese (I just use reg cheese slices
- 8 slices of Canadian Back Bacon or Ham
- 6 eggs
- 1/2 Tsp Salt
- 1/2 Tsp Pepper
- 1/2 to 1 Tsp Dry Mustard
- 1/4 Cup Minced Onion
- 1/4 Cup Green Pepper, Finely chopped
- 1 to 2 Tsp Worcestershire Sauce
- 3 Cups Whole Milk (I use whatever I have, usually 1 %)
- Dash Red Pepper (Tabasco)
- 1/4 Lb. Butter
- Special K or Crushed Corn Flakes
