Holiday Breakfast Bake

1. Heat oven to 400 degrees F
- 2 (12 oz) pkg bulk pork sausage
- 1 cup chopped bell peppers (mixed red & green)
- 1/2 cup chopped onion
- 3 cups frozen hash brown potatoes
- 2 cups shredded Cheddar cheese
- 1 cup Bisquick mix
- 2 cups milk
- 1/4 teaspoon pepper
- 4 eggs
No Bake Oatmeal Cookie Balls

In a large bowl, combine the oats, sugar, and cocoa
- 2 cups rolled oats
- 3/4 cup white sugar
- 3 tablespoons unsweetened cocoa powder
- 1 tablespoon water
- 1/2 teaspoon vanilla
- 2/3 cup butter, softened
- 1 cup confectioner's sugar
Frozen Strawberry Sandwich Bars

Blend Cool Whip and Strawberries together
- Graham crackers
- Cool Whip
- Strawberries
Orange Zucchini Bread

Preheat oven to 350 degrees F
- Glaze:
- 4 cups flour
- 4 cups grated zucchini
- 2 teaspoons salt, scant
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 cups granulated sugar
- 2 cups applesauce
- 2/3 cup vegetable oil
- zest of two oranges
- 1 teaspoon vanilla
- 2 tablespoons orange juice
- 2/3 cup chopped walnuts or raisins
- 1 cup powdered sugar
- 4 tablespoons orange juice
- 1/2 teaspoon orange zest
Blueberry-Ginger Relish

Mix all ingredients together and chill for 20 minutes prior to serving
- 1 cup fresh blueberries, coarsely chopped
- 1 shallot, chopped
- 1 Serrano chile, seeded and minced
- 1 tablespoon fresh cilantro chopped
- 1 tablespoon lime juice
- 1 tablespoon minced fresh ginger
- 1/4 teaspoon salt
Christmas Eve Mice

On a tray, place Oreo cookie halves (the sides that have the cream filling on them)
- 24 Double Stuff Oreo Cookies
- 1 cup semisweet chocolate chips
- 2 tsps shortening
- 24 maraschino cherries with stems, well drained
- 24 milk chocolate candy kisses
- 48 sliced almonds
- 1 small tube green decorating icing gel
- 1 small tube red decorating icing gel
- (Or could use already prepared dipping chocolate instead of chocolate chips and shortening(
Pecan Crusted Chicken Salad w/ Maple BBQ Dressing

Heat 1 1/2- 2 inches oil in skillet over medium high heat
- Dressing:
- Oil for frying
- 1 1/3 - 2 lbs chicken tenders
- salt and freshly ground pepper to taste
- 1 cup flour
- 2 eggs beaten with a splash of milk or water
- 1 cup plain bread crumbs
- 1 cup pecans, finely chopped in a food processor
- 1/2 tsp nutmeg
- freshly grated or ground zest of 1 orange
- 1/4 cup maple syrup
- 1/4 cup tangy barbecue sauce
- juice of 1 navel orange
- 1/4 cup extra virgin olive oil
- Salad:
- 3 hearts Romaine lettuce, shredded
- 6 radishes, thinly sliced
- 6 scallions, trimmed and chopped at an angle
- salt and freshly ground pepper to taste
Mostaccoila Salad

Cook and drain mostaccoila according to package
- 1 cup vinegar
- 1 cup olive oil
- 3 tsp salt
- 1/4 tsp pepper
- 1/2 tsp garlic powder
- 1/4 tsp celery seed
- 1 tsp dry mustard
- 1/2 tsp onion flakes
- 3 tbs sugar
- 1/2 tsp Accent or MSG
- 1/2 tbs parsley
- 2-16 oz pkgs mostaccoila or spiral macaroni
- 1 tomato, diced
- 1 cucumber, peeled and diced
Linzer Cookies

1. Preheat oven to 350 degrees F
- 3/4 lb. unsalted butter, room temperature
- 1 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 3 1/2 cups flour
- 1/4 teaspoon salt
- 3/4 cup raspberry preserves
- Confectioner's sugar, for dusting
