Pickled Peaches (Dolly Parton's recipe)

Put a large pot of water on to boil
- 4 cups sugar
- 1 cup apple cider vinegar
- 1 tablespoon peeled, coarsely chopped ginger
- 8 cinnamon sticks
- 2 teaspoons whole cloves
- 4 pounds peaches
Southwestern Vegetable Soup

Combine all the soup ingredients in a large saucepan or soup pot over high heat
- Garnish:
- 6 cups chicken broth
- 1- 14.5 oz can diced tomatoes, with juice
- 1 cup water
- 1 cup canned dark red kidney beans, with liquid
- 1 cup frozen yellow corn
- 1 cup frozen green beans
- 1- 4oz can diced green chilies
- 1/2 cup diced spanish onion
- 1/2 cup tomato sauce
- 6 corn tortillas, minced
- 1 1/2 tsp chili powder
- dash garlic powder
- 1 cup grated cheddar/jack cheese blend
- 1 cup crumbled corn tortilla chips
Easy Baked Chili Rellenos

Beat eggs and sour cream. Stir in cheeses, diced chilies, salt, & tobasco sauce
- 4 eggs
- 1/2 cup sour cream
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded Cheddar cheese
- 2 cans diced green chilies
- 1-4 oz can whole green chilies
- 1/4 tsp salt
- 2-3 drops Tobasco Sauce
- Tomato or cilantro for garnish
Rhubarb Cobbler

Cut softened margarine into dry cake mix to make crumbly mixture
- 3 cups rhubarb, cut into pieces
- 1 cup sugar
- 1 small box strawberry jello
- 1 yellow cake mix
- 1 cup warm water
- 1 stick margarine, softened
Chicken Noodle Casserole

Preheat oven to 375 degrees F
- 1 pound egg noodles
- 2-3 cups cooked chicken, cubed
- 1 (14 oz.) can cream of chicken soup
- 1 (10.75 oz.) can condensed cream of mushroom soup
- 1 (16 oz.) bag frozen peas and carrots
- 3/4 cup heavy cream
- 2/3 cup parmesan cheese grated
- 1/2 cup cheddar cheese, grated
- 1/3 cup seasoned Italian breadcrumbs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon garlic salt
- Kosher salt and freshly ground pepper to taste

- 1 cup butter, softened
- 1 cup brown sugar, packed
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups flour
- 1 teaspoon baking soda

- 1 1/4 cups semisweet chocolate chips, divided
- 1/2 cup chopped pecans
- 1 cup Kraft caramel bits

- 1 1/2 cups cooked, chopped chicken breast meat
- 12 oz low fat evaporated milk
- 1/2 cup chopped red onion
- 2 large eggs, lightly beaten
- 1/4 cup chopped fresh cilantro
- 2 tablespoons, butter, melted
- 1 tablespoon diced jalapenos

- 2 sticks margarine
- 1 cup water
