Mexican Chopped Salad

Dressing: Combine lime juice, honey, cumin, garlic, pepper, and salt
- Dressing:
- 1/4 cup fresh lime juice
- 2 tablespoons honey
- 1/2 teaspoon cumin
- 1 clove garlic
- 1/2 teaspoon salt
- 2 tablespoons canola oil
- 2 tablespoons extra virgin olive oil
- freshly ground black pepper
- taste and add salt, if needed
- Salad:
- 1 medium head romaine lettuce; chopped in approximately 1/2 inch pieces
- 1 medium bell pepper, diced in 1/4-inch pieces (use whatever color you want)
- 1/2 medium red onion, diced in 1/4-inch pieces
- 1/2 medium jicama, peeled and diced in 1/4-inch pieces
- 1 medium zucchini, diced in 1/4-inch pieces
- 4 medium tomatoes, seeded and diced into 1/4-inch pieces
- 4 ears corn, still in husks
- 1 1/2 cups canned black beans, drained and rinsed
- 1/2 cup finely chopped fresh cilantro
Turkey Noodle Soup

Heat a large saucepan over medium-high heat
- 1 cup (1/4 inch thick) slices carrot
- 3/4 cup chopped onion
- 4 garlic cloves, minced
- 1 cup (1/4 inch thick) slices celery
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 6 cups fat-free, less sodium chicken broth
- 2 cups (3 ounces) uncooked egg noodles
- 1 tbsp. low-sodium soy sauce
- 1 bay leaf
- 2 cups shredded turkey (about 8 ounces)
- Coarsely ground black pepper (optional)
Cranberry Salad

Prepare jello as usual except use reserved pineapple juice as part of the 2 cups hot water to dissolve jello
- 2 pkgs Raspberry flavored jello
- 1 can whole cranberry sauce
- 1 can pineapple, crushed or tidbits, drained (reserve juice)
- 1/2 cup chopped pecans
No Bake Chocolate Oatmeal Cookies

Mix cocoa into sugar until blended in heavy saucepan
- 3 tbs baking cocoa
- 2 cups sugar
- 1/2 cup milk
- 1 stick margarine
- 2 tbs peanut butter
- 3 cups one minute type oatmeal
- 1 tsp vanilla
Stuffing Meatloaf

Preheat oven to 350 degrees F
- 1 pkg. Stove Top Stuffing, dry
- 1 cup warm water
- 1 1/2 lbs. lean ground beef
- 2 eggs, slightly beaten
- 1 pkg. dry onion soup mix
Rockin' Guacamole

Mix and ingredients in medium size bowl
- 3 ripe avocadoes, pitted, peeled, and mashed
- 1 10 oz. can ROTEL Original Diced Tomatoes & Green Chilies, drained
- 1/2 cup chopped onion
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- Ground black pepper
- Tortilla chips

Preheat oven to 350 degrees F
- 1 8 oz can refrigerated crescent rolls
- 4 tablespoons sour cream
- 1/4 cup shredded chicken, seasoned with Mexican flavorings
- 4 tablespoons shredded Mexican Four Cheese Blend cheese
- 1/4 cup chopped green onions
- salsa, optional
Rhubarb Cake

Combine brown sugar, oil, and egg
- Cake:
- 1 1/2 cups brown sugar
- 1 egg
- 2/3 cup oil
- 1 cup milk
- 1 tsp vanilla
- 2 1/2 cups flour, sifted
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 cups finely chopped rhubarb
- 1/2 cup chopped nuts (optional)
- Topping:
- 1/3 cup sugar
- 1 tb. melted butter
- 1/2 tsp cinnamon
Cowboy Casserole

- 1 1/2 lbs ground beef
- 1 medium onion, chopped
- 3 cloves garlic, chopped
- 1 can whole kernal corn, drained
- 1 can cream of mushroom soup
- 2 cups shredded cheddar cheese
- 1/2 cup milk
- 4 tablespoons sour cream
- 1 (30 oz) bag frozen tater tots (Crispy Crowns)
