Habanero Barbecue Dry Rub

Mix all ingredients. Rub on meat and refrigerate the night before smoking
- 4 tb Chile, ground, habanero
- 2 ts Paprika, hungarian
- 1 ts Cumin, powder
- 1 ts Coriander, ground
- 1 ts Salt
- 1 ts Onion powder
- 1 ts Garlic powder
- 1/2 ts Mustard, dry, coleman's
- 1/2 ts Black Pepper, fresh ground
- 1/2 ts Thyme, leaves, dried
- 1/2 ts Curry powder
- 1/2 ts Allspice, ground
Chocolate Crepe Cake

1. Make the crepes by warming melting the butter and allowing it to brown slightly
- For the crepes:
- 6 tablespoons (100 grams) butter
- 3 cups (675 milliliters) milk
- 6 eggs
- 1 1/2 cups (210 grams) flour
- 2/3 cup (80 grams) cocoa powder
- 7 tablespoons (105 grams) sugar
- 4 cups (1 liter) whipped cream
- For the ganache:
- 1 cup (225 milliliters) heavy cream
- 4 tablespoons (200 grams) sugar
- 6 ounces (170 grams) chocolate
- 1 tablespoon (15 grams) butter
- 1/4 cup (40 grams) powdered sugar, optional for topping

Key Lime cake Pre-heat oven to 300°
- Key Lime cake
- 4 sticks butter, that’s 1 pound, room temperature
- 3 cups sugar
- 6 large eggs, room temperature
- 4 cups all-purpose flour
- 1/2 cup fresh key lime juice
- 1/4 cup evaporated milk, (I always keep a good number of those small, 5 ounce cans in my pantry.)
- 4 teaspoons key lime zest, minced
- 1 teaspoon vanilla
- Key Lime Cream Cheese Icing
- 8 ounces cream cheese, room temperature
- 3-4 tablespoons butter, room temperature
- 4 cups confectioner’s sugar
- 1/4 cup freshly squeezed key lime juice
- 2-3 teaspoons key lime zest
- 1 teaspoon vanilla extract
TACO SOUP

Saute onions and garlic till opaque, add hamburger meat and cook till browned
- 2 cans Pinto beans
- 1 can Kidney beans
- 1 onion, diced
- 5 cloves garlic, diced
- 1 pkg taco seasoning
- 1 pkg ranch dressing(dry)
- 1 can sliced black olives
- 1 can green chilies
- 1 can petite tomatoes
- 1 can rotel tomatoes
- 1 lb to 2lb hamburger meat
