Cranberry, Apple and Sausage Stuffing

- 8 tablespoons (1/2 cup or 1 stick) butter, unsalted
- 2 medium onions, finely diced
- 3 cups chopped celery, (about 6 large stalks)
- 6 cups coarsely chopped leeks, (about 12)
- 4 apples, peeled, cored and chopped
- 1 pound breakfast sausage or Italian sausage, casings removed
- 6 teaspoons poultry seasoning
- 2 teaspoons chopped fresh rosemary leaves, (about 4 sprigs)
- 2 teaspoons chopped fresh sage leaves, (about 6 leaves)
- 2 teaspoons chopped fresh parsley leaves, (about 4 to 6 sprigs)
- 2 cups dried cranberries
- 1 box stuffing mix (not cornbread) (recommended: Pepperidge Farm)
- 2 cups (1 pint) vegetable stock
- Salt and freshly ground black pepper

- 1 pound Italian sausages (use spicy to get that signature Olive Garden flavor)
- 4 to 6 russet potatoes, chopped
- 1 onion, chopped
- 1/4 cup real bacon pieces (optional)
- 2 tablespoons garlic, minced, about 3 to 4 cloves
- 32 ounces chicken broth
- 1 cup kale or Swiss chard, chopped
- 1 cup heavy whipping cream
- 2 tablespoons flour

Heat olive oil in a large pan or skillet over medium-high heat and brown seasoned chicken on all sides
- 8 assorted, boneless, skinless chicken pieces (we used breasts and thighs)
- 1 (10.75 oz.) can low-sodium cream of chicken soup
- 1 (1.2 oz.) package dry chicken gravy mix
- 1 (0.7 oz.) package dry Italian salad dressing mix
- 1/4 cup water or white wine
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon chili powder
- kosher salt and freshly ground pepper, to taste

- Ingredients for Meatloaf
- 1 lb ground lean pork
- 1 lb ground sirloin
- 1-1/2 cups bread crumbs
- 1 chopped onion
- 2 eggs
- 1 shredded carrot
- 2 cided stalks of celery
- 1/2 red or yellow diced pepper
- 4 cloves diced garlic
- 1/2 cup chopped parsley
- small can tomato sauce
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp sage
- dash of nutmeg

- 1-1/2 cups mushrooms, sliced

- 2 tsp cornstarch diluted with water

- 1 -- 6oz frozen concentrate limeade mixed with one can of water
- 1 -- 6oz frozen concentrate orange juice mixed with one can of water
- 1 --liter Hill Country Fair (HEB) grapefruit soda well chilled(can substitute Squirt)
- 1 --bottle Dry Comal Creek Foot Pressed Red Wine
- (add another bottle of wine if you want more wine taste)
