Waldorf Astoria Beef Stew - Crock Pot (Copycat)

Place all in a large crock pot
- 2 lbs sirloin beef, cut up (raw)
- 2 cups potatoes, cut in lg. pieces
- 2 cups carrots, cut in lg. pieces
- 2 cups celery, cut in lg. pieces
- 1 (16 ounce) bag white pearl onions, frozen
- 1 slice white bread, cut up
- 1 (16 ounce) can whole tomatoes (and juice)
- 2 tablespoons dry onion, minced
- 3 tablespoons quick-cooking tapioca
- 1 tablespoon sugar
- 1 (10 1/4 ounce) can tomato soup
- salt
- pepper
Bechamel Sauce

In a saucepan, heat up milk and bring to a gentle simmer
- 2.5 oz butter (70g)
- 2.5 oz flour (70g)
- 4 1/2 cup milk (1 liter)

- 2 teaspoons salt

- 2 14 ounce cans premium coconut milk
- 1 heaping Tablespoon Thai curry paste
- 1 bunch cilantro roots, rinsed well
- 2 chicken breasts, thinly sliced
- 2 cups chicken broth
- 1 carrot, shredded
- 4 or 5 lime leaves
- 2 stalks lemon grass, halved lengthwise, woody leaves removed
- 2 tablespoons fish sauce
- 2 limes zest and juice
- a small knob frozen ginger
- a handful bean sprouts
- 8 ounce package rice noodles
- 1 bunch cilantro leaves, rinsed well
- 2 or 3 green onions, thinly sliced
- a sprinkle or two salt or soy sauce
Party Shrimp

1. In a large resealable plastic bag, combine the first eight ingredients
- 1 tablespoon olive oil
- 1-1/2 teaspoons brown sugar
- 1-1/2 teaspoons lemon juice
- 1 garlic clove, thinly sliced
- 1/2 teaspoon paprika
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon dried basil
- 1/4 teaspoon pepper
- 1 pound uncooked large shrimp, peeled and deveined
Corn Chowder

In a slow cooker, combine all ingredients
- 2 ½ c. Milk
- 1 can (14 3/4oz) cream-style corn
- 1 can mushroom soup, undiluted
- 1 ¾ c. frozen corn
- 1 c. frozen hash browns
- 1 c. cubed fully cooked ham
- 1 large onion, chopped
- 2 Tbls. Butter
- 2 tsp. parsley flakes
- Salt and Pepper

Instructions: Spray a fluted pan with non-stick spray
- 2 small tubes refrigerator buttermilk biscuits OR 1 tube Pillsbury Grands buttermilk biscuits
- 3 Tbsp. butter, melted 1/2 C. pancake syrup
- 1/3 C. packed light brown sugar
- 1/2 tsp. cinnamon
- 1/4 C. chopped pecans, optional
- 1/4 C. chopped almonds, optional
Chicken Satay Stir-Fry

Process first 9 ingredients in blender or food processor until smooth
- 1/3 cup smooth peanut butter
- 1/4 cup brown sugar, packed
- 1/4 cup water
- 3 tbsp lime juice
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp chili paste
- 1 tsp cornstarch
- 1 garlic clove, minced

- 3/4 lb boneless, skinless, chicken thighs, cut into 1" pieces

- 1 cup thinly sliced onion
- 1 cup mushrooms, halved
- 1 cup celery, thinly sliced
- 1 cup red pepper, thinly sliced
- 2 tbsp unsweetened coconut
Barbecue Shredded Pork Sandwiches

Place roast in 3 1/2 to 4 quart (3
- Boneless pork shoulder butt roast 3 lbs.
- Can of tomato sauce 14 oz.
- Brown sugar, packed 1/2 cup
- Ketchup 1/2 cup
- Medium onion, chopped 1
- Apple cider vinegar 1/3 cup 7
- Garlic cloves, minced 4 (or 1 tsp., 5 mL, powder)
- Worcestershire sauce 1 tbsp.
- Chili powder 2 tsp.
- Dry mustard 2 tsp.
- Salt 1 tsp.
- Pepper 1/2 tsp.
- Dried crushed chilies 1/2 tsp.
- Crusty rolls, split (toasted, optional) 12
Slow Cooker Spicy Chicken

Toss everything in the crock pot
- 4 chicken breasts
- Large can of diced tomatoes (can use plain, or chili accents)
- 1 large can of black beans undrained (or red kidney beans)
- 2 cloves of garlic
- 1 cup salsa (pick your own heat!)
- 1 can green chili's diced (opt)
- 1 can corn, undrained
- 1 can tomato sauce (last time I didn't have this so I threw in chicken stock and some extra salsa)
- 2 t of cumin
- salt & pepper to taste
