1.Combine sugar, milk, butter and salt in a medium sized saucepan
- 1 2/3 cups white sugar
- 2/3 cup evaporated milk
- 1 tablespoon unsalted butter
- 1/2 teaspoon salt
- 1 (6 ounce) packages milk chocolate chips
- 16 large marshmallows
- 1 teaspoon pure vanilla extract
- 1 cup chopped nuts

Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy
- TOPPING:
- 1/2 cup butter, softened
- 3/4 cup sugar
- 2 large eggs

- 2-1/2 teaspoons baking powder
- 1-3/4 teaspoons ground cinnamon

- 2/3 cup packed brown sugar
- 1/2 cup all-purpose flour
- 1/4 cup cold butter

- 6 cups thinly sliced peeled Gala or other sweet apples (about 6 medium)
- 18 caramels, unwrapped
- 1 tablespoon buttermilk
- Vanilla ice cream, optional
Diabetic Applesauce Cookies

Blend applesauce, margarine, eggs, vanilla and brown sugar
- 1-1/2 cups unsweetened applesauce
- 3/4 cup softened margarine
- 2 eggs
- 1 Tablespoon vanilla
- 1/3 cup brown Sugar Twin
- 3 cups oatmeal
- 1-1/2 cups flour
- 1-1/2 teaspoons soda
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon salt
- 1 cup raisins

- 2 TBS canned pumpkin (any type of squash would work)

- 1/4 cup honey
- 1 teaspoon peppermint extract
- 6 ounces dark chocolate chunks

All-In-One Spaghetti

- 1 pound lean ground beef
- 1 large onion, chopped
- 2 garlic cloves, minced
- 4 cups water
- 2 (6-ounce) cans tomato paste (sugar-free)
- 1 (8-ounce) can tomato sauce (sugar-free)
- 2 to 3 tsp. chili powder
- 1 tsp. dried oregano
- 1 tsp. sea salt
- Dash of black pepper
- 1 (7-ounce) package spelt or brown-rice thin spaghetti or linguine, uncooked
- Fresh basil or Italian flat-leaf parsley, chopped
