Low Fat Crockpot Corn Bread

Directions Put all dry ingredients into a mixing bowl
- 1 1/4 C. all purpose flour
- 3/4 C. corn meal
- 1/4 C. low calorie sweetener
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 C. buttermilk (low fat or fat free)
- 1/4 C. egg whites
- 1/4 C. canola oil
Buffalo Hummus

1. Combine all the ingredients except the oil (or water) and cayenne
- Yield: 2 cups
- 1 can (15-ounces or 440 g) or 1 1/2 cups (246 g) cooked chickpeas, drained and rinsed
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt (I used 1/2 teaspoon fine grain sea salt – AL)
- 2 cloves garlic
- 2 tablespoons (30 g) tahini
- 1 tablespoon (15 ml) hot sauce (I used Frank’s Hot Sauce – AL)
- 1 tablespoon (15 ml) lemon juice
- 1/2 cup (90 g) jarred roasted red pepper
- 2 tablespoons (28 ml) olive oil or liquid from can (I used water- AL)
- Cayenne pepper, to taste, for serving

- 2 Tbsp chia seeds
- 2/3 c peanut butter
- 1/2 c honey
- 2 egg
- 2/3 c applesauce (or mashed banana)
- 1 tsp vanilla
- 2/3 c craisins
- 1/2 c chocolate chips (optional)
Kay's Spaghetti and Lasagna Sauce

Directions Blend the stewed tomatoes and crushed tomatoes in a blender
- 1 (28 ounce) can stewed tomatoes
- 1 (28 ounce) can crushed tomatoes
- 1 pound lean ground beef
- 2 yellow onions, chopped
- 2 green bell peppers, chopped
- 5 cloves garlic, chopped
- 2 tablespoons white sugar
- 1 tablespoon dried basil
- 1/2 teaspoon dried oregano

- 3 cups filtered water
- 4 pitted dates soaked, or 2 -3 Tbsp maple syrup or raw agave or more to taste or Stevia.
- 1 tsp alcohol-free vanilla extract or 1/2 tsp regular vanilla extract
- 1 Tbsp NON GMO soy or sunflower seed lecithin (optional to obtain a smooth consistency)
- 1 Tbsp raw unrefined coconut butter (optional for a richer milk)
