Egg Roll Stir-Fry

Cook and crumble ground meat with onions in a very large skillet until meat is cooked through
- 1 pound ground beef or pork
- 1 large onion, diced
- 1 small head of cabbage
- 3 carrots
- 4-5 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1/2 teaspoon black pepper
- 2 tablespoons sesame oil
- 1 tablespoon vegetable oil
- 1/4 cup soy sauce
Tempering

To get chocolate to set at room temperature, you have to temper it
- Chocolate (8oz)
- shortening (1 teaspoon)
- Also just use candy coating (melted) instead.

- 1/4 cup cocoa powder
- 1 tsp. baking soda
- 1 tsp baking powder
- 1/4 tsp salt

- 1 ripe avocado
- 3 eggs at room temp
- 3/4 c Xylitol
- scant 1/4 cup applesauce at room temp (I put a whole apple in the blender and then heated for about 20 min on the stove top)
- 1/4 cup coconut or almond milk

- 1 (9 inch) unbaked pie crust
- 2 tablespoons unsalted butter, melted
- 1 cup cooked and mashed sweet potatoes
- 2 eggs, beaten
- 3/4 cup light brown sugar
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon freshly grated nutmeg
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup dark corn syrup
- 1 cup evaporated milk
- 1 1/2 cups chopped pecans
- 2 cups heavy whipping cream
- 3 tablespoons confectioners' sugar
- 1/4 cup hazelnut liqueur
- 1/4 cup pecan halves
