Chewy Coconut Bars

- 2 eggs
- 7-1/4 teaspoons sweetener
- 1/4 teaspoon maple flavoring
- 1/2 cup margarine, melted
- 1 teaspoon vanilla
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsweetened coconut, finely chopped
- 1/2 cup chopped walnuts
- 1/2 cup raisins
Swedish Meatballs

Prepare
- Gravy:
- 2 pound grass fed ground beef (makes the best gravy with 80/20)
- 1/4 cup parsley, minced (dried or fresh)
- 3 garlic cloves, minced
- 2 eggs
- 1/2 cup dried onion (it’s all we had but fresh would be great too)
- 1/2 cup almond flour/meal
- 1 3/4 tsp sea salt
- 1/2 tsp black peppercorns
- 1/2 tsp nutmeg
- 1 cups chicken (or beef) broth
- 1 tbsp arrowroot powder
- 1 tbsp cold water
- 1/2 cup unsweetened almond milk (or other dairy alternative)
- Salt and pepper, to taste
- Parsley for garnish
Oatmeal Almond Butter Cookies

Preheat oven to 350 degrees
- 1/2 cup roasted almond butter, softened to a stir-able consistency
- 1/2 cup plus 2 tbsp quick oats
- just under level 1/4 tsp salt
- 3/4 tsp baking soda
- 1/4 cup xylitol or sugar of choice
- 2 tbsp applesauce
Sweetened Condensed Milk*

- 1/3 cup boiling water
- 3 Tablespoons melted butter

This is a wonderful tasting Fudge
- 1 1/3 cups sugar
- 7 ounces marshmallow creme
- 2/3 cup evaporated milk
- 1/4 cup butter
- 1/4 cup Kahlua
- 1/4 teaspoon salt
- 2 cups semisweet chocolate pieces
- 1 cup milk chocolate pieces
- 2/3 cup chopped nuts
- 1 teaspoon vanilla
Mini Pecan Pies in a Jar

Preheat oven to 350°F. Spray interiors of jars with cooking spray
- 8 (4 ounce) glass canning jars
- 1 cup (4 ounces) pecan halves
- 2/3 cup Karo® Light OR Dark Corn Syrup
- 2 eggs
- 2/3 cup sugar
- 1-1/2 tablespoons butter, melted
- 3/4 teaspoon Spice Islands® Pure Vanilla Extract
- Whipped cream
- Crumbled graham crackers, vanilla wafers OR cookies, optional
Gluten Free Quadruple Coconut Pie

- 14 oz light coconut milk*
- 4 large eggs
- 1 cup coconut, dried unsweetened shredded
- 1 cup sugar
- 1/4 cup coconut oil
- 1/4 cup coconut flour
- 1 1/2 teaspoons vanilla
- Dash of salt
- 1/2 cup coconut chips
- 1/4 mini chocolate chips
15-Minute Ramen Bowl - Sophie Uliano

1.Heat the broth in a large saucepan with the seaweed if using
- Serves 2
- 4 cups veggie broth
- 4 inches Kombu dried seaweed (optional, but delivers great flavor)
- 2 cloves garlic, pressed
- 1 tbsp Miso or Miso And Easy Broth
- 1 package gluten free Ramen Noodes – my favorite are by Lotus Foods
- 1 cup of mushrooms (Shitake, Wood Ear, Cremini – whatever you can find)
- 2 cups Napa or Savoy cabbage, chopped
- 2 cups of Chard, stems removed, and roughly chopped
- 1 package of baked tofu, cubed
- 1 cup beansprouts
- 2 tsp sesame seeds (I like to use both black and white)
