Black Bean Salad with Avocado-Lime Dressing

Method: In a large bowl, whisk together avocado, cilantro and lime juice until blended
- 1 ripe avocado, mashed
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- 2 (15 ounce) cans no-salt-added black beans, rinsed and drained
- 4 cups shredded romaine lettuce
- 1 cup grape tomatoes, halved
- 1 small red bell pepper, chopped
- 1/2 cup toasted pumpkin seeds
Pumpkin Pie Smoothie

Taste like you're drinking a pumpkin pie straight out of a straw
- 2 tbsp protein powder (whey or egg white)
- 1 tbsp flaxseed oil
- 1 cup unsweetened coconut milk
- 1/2 frozen banana
- 1/2 cup pure pumpkin puree
- 1 tsp pumpkin pie spice
- 1/4 tsp vanilla extract
- 1/2 cup ice
Grain Free Everything Dinner Rolls

Preheat oven to 350 degrees ºF

- 1 cup tapioca starch
- 1/3 cup coconut flour
- 1/4 cup arrowroot starch
- 1 teaspoon sea salt
- 1 organic egg
- 1 teaspoon honey
- 1/2 cup water
- 1/2 cup melted coconut oil
- 1 tablespoon sesame seeds, optional
- 1 tablespoon poppy seeds, optional
- 1/2 teaspoon garlic powder, optional
Pork & Green Chile Stew

I used a 3.5 quart slow cooker for this recipe, but a 3 quart size would also work
- 2 lbs. trimmed pork cubes (I started with about 2 1/2 pounds pork sirloin chops and trimmed off all the fat to make 2 pounds of pork cubes, you could also use pork loin chops.)
- 1 T + 1 T olive oil
- salt and fresh ground black pepper to taste
- 1/2 cup water
- 1 large onion, chopped (about 1 1/2 cups chopped onion)
- 2 T minced garlic
- 1 T ground cumin
- 1 T dried oregano (I used Mexican oregano, but regular oregano will probably work too.)
- 2 cans Ro-Tel Tomatoes with Mild Green Chiles (be sure to get mild, unless you really like hot food!)
- 1 can diced green Anaheim chiles (I used a 7 oz. can, but next time I'd use a 4 oz. can, so decide how spicy you want it. Be sure to get Anaheim chiles and not Jalapenos, which are much hotter.)
- 2 T fresh lime juice
- Optional: sour cream for serving

Line a 13x9 inch pan with foil and butter the foil with 1 tablespoon butter; set aside
- 1 tablespoon plus 1/2 cup butter, divided
- 3 milk chocolate candy bars (two 7 ounces, one 1.55 ounces), broken into pieces
- 4 cups (24 ounces) semisweet chocolate chips
- 1 jar (7 ounces) marshmallow creme
- 1 can (12 ounces) evaporated milk
- 4 1/2 cups sugar
- 2 cups chopped walnuts
Cauliflower Fritters

Cut cauliflower into little florets and add to the bowl of your food processor
- Half a large head cauliflower
- 1 carrot, grated
- 2 whole eggs
- 1/4 cup flaxseed meal
- 1/4 cup raw, unsalted sunflower seeds
- 1/4 cup hazelnuts, finely chopped
- 1/4 cup fresh parsley, finely chopped
- 1 tsp lime juice
- 1/2 tsp salt
- 1 tbsp poppy seeds
- 1/4 tsp black pepper
- 1 tsp fresh thyme
- 1/2 tsp ground cinnamon
- 1/4 tsp smoked paprika
- pinch cayenne pepper

Blend the coconut milk, cacao, vanilla, peppermint extract and stevia until frothy
- This chocolatey, minty, creamy drink is so yummy, you'd never guess it was healthy.

- 1/2 cup coconut milk or almond milk
- 1 teaspoon raw cacao powder
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon peppermint extract
- 8 drops liquid stevia, or to taste
- Fresh mint for garnish
Pumpkin Pancakes

Pumpkin Pancakes Recipe: In a medium bowl, combine all dry ingredients and stir very well
- 1/2 cup spelt, all-purpose, or Bob’s gf flour
- just under 1/4 tsp salt
- 1/4 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp pumpkin pie spice
- only if using gf flour, add 1/4 tsp xanthan gum
- pinch stevia, or 2 tbsp liquid sweetener of choice
- up to 1/2 cup milk of choice, depending on flour choice and on desired pancake thickness (add up to 2 tbsp more if using stevia)
- 1/2 tsp white or apple cider vinegar
- level 1/4 cup plus 3 tbsp pumpkin or sweet potato puree
- 2 tsp oil or 1 extra tbsp pumpkin puree
- 1 tsp pure vanilla extract
