Pasta With Bacon In Tomato Cream Sauce

- 1 c. heavy cream

Roasted Chicken With Olives, Feta and Sun-Dried Tomatoes

1. Preheat the oven to 375 degrees
- 3 teaspoons extra-virgin olive oil
- 4 4 ounces boneless, skinless chicken breasts
- 1 teaspoon dried oregano
- Salt
- Freshly ground black pepper
- 1/3 cup pitted chopped Kalamata olives (about 10)
- 1/4 cup crumbled feta
- 3/4 cup chopped oil-packed sun-dried tomatoes, drained
- 2 cups cooked whole-wheat orzo

- 4 C whole wheat flour (preferably stone ground)
- 2 C all purpose flour
- 1/2 C rolled oats (not instant)

- 3/4 poundsmall white mushrooms; wiped clean and sliced in half

Chicken & Dumplings

1. In large soup pot, sauté chicken and onion over medium heat until chicken is browned, about 6-8 minutes
- For the Soup:
- 2 lbs boneless, skinless chicken breasts, cut in 1" cubes
- 1 cup yellow onion, chopped
- 1 cup celery, thinly sliced
- 1/4 cup all purpose flour
- 10 cups chicken broth (seems like a lot, but trust me….its ok)
- 2 cups carrots, sliced
- 1/2 tsp ground thyme
- For dumplings:
- 2 cups all purpose flour
- 1 tbsp baking powder
- 3/4 cup buttermilk (if you don’t have buttermilk, put 1 tsp vinegar in measuring cup and fill with milk to make 3/4 cup. Let it set to get thick)
