Apple Fried Pie

1. To make the crust, mix together the flour and salt
- 2 cups all purpose flour
- 1/2 teaspoon kosher salt
- 1/2 cup lard, chilled
- 1/4 cup cold water
- 4 tablespoons unsalted butter
- 2 cups cooking apples such as Granny Smith, peeled, cored, and diced (about 1/2 pound of apples)
- 1 tablespoon all purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ancho chile powder
- 1/2 teaspoon kosher salt
- Oil for frying
- Powdered sugar and ground cinnamon for sprinkling

Blend all of the ingredients in a blender until smooth

- 1/2 tsp. dried thyme
- 2 tsp. sea salt (or to taste)
- 1/2 tsp. freshly ground black pepper
- 1 1/2 lbs. skinless, boneless chicken breasts
- 3 cups uncooked spelt or brown rice noodles or pasta
Paleo Apple Almond Muffins

- 1 cup sweet potato (boiled and mashed)
- 1/2 cup coconut oil
- 1/2 cup honey
- 1 egg
- 1/2 teaspoon salt
- 1/2 teaspoon ground cloves
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/2 cup almond flour*
- 1 1/2 cup spelt flour
- 1/3 cup nuts (optional, I used sunflower seeds)
