COOKING DIRECTIONS: Combine chicken, green onions, red onions, cilantro & avocado in a medium bowl
- 2 cups cooked, shredded chicken (3 boneless skinless chicken thighs)
- 2 tablespoons chopped green onions
- 1 tablespoon minced red onion
- 1/2 cup chopped cilantro
- 1 avocado, mashed
- pinch garlic powder
- pinch chili powder
- pinch ground cumin
- juice from 1 small lime
- salt & pepper to season

- 2 cups fresh sliced mushrooms
- 1 medium onion, thinly sliced
- 2 tbsp butter
- 2 tbsp all-purpose
- 1 cup red wine
- 2 cups beef stock
- Dark soy sauce, to taste
