Weight Watchers Rice Krispie Bars*

Place the margarine and marshmallows in a large bowl, microwave until melted
- 1 Tablespoon butter or margarine
- 30 large marshmallows or 7 oz. small
- 5 cups rice Krispies
- 1/3 cup crushed red hots
Blooming Onion

To Make the Blooming Onion: Preheat oven to 400 degrees
- For the Blooming Onion:
- 1 large Vidalia onion
- 2/3 cup Panko breadcrumbs
- 1 Tbsp. Cajun or blackening seasoning (**see alternate seasonings below**)
- 1/4 tsp. salt
- 2 eggs
- optional sides: ketchup, spicy dipping sauce (see below), ranch dip, honey mustard
- For the Spicy Dipping Sauce:
- 1/2 cup Greek yogurt (or mayo)
- 2 Tbsp. ketchup
- 2 tsp. horseradish sauce
- 1/4 tsp. salt
- 1/4 tsp. smoked paprika
- 1/8 tsp. garlic powder
- 1/8 tsp. oregano

1. Put the bread crumbs in a food processor and process to fine crumbs
- 1/2 cup fresh bread crumbs from Panera Bread Country loaf or miche, crust removed
- 1 cup canned carrot juice or low-sodium vegetable broth
- 1/4 cup extra virgin olive oil
- 2 tablespoons white wine vinegar
- 2 small cloves garlic, chopped
- 1 1/2 teaspoons salt
- 1/8 teaspoon hot pepper sauce
- Pinch of sugar
- 2 pounds yellow tomatoes (4 to 6), cored and chopped
- 1 small yellow bell pepper, cored, seeded, and chopped
- 1 cucumber, peeled, seeded, and chopped
- 1 tablespoon drained small capers
