Spicy Asian Chicken Soup

Bright flavors of ginger, lime, chili and cilantro really make this quick soup taste fantastic

- Total time: 30 minutes
- 48 ounces (6 cups) chicken broth
- 1/4 cup tamari
- 1/4 tsp. Asian chili paste (or 1/4 teaspoon red pepper flakes)
- 2 Tbls. fresh lime juice
- 1-inch piece of fresh ginger, peeled and cut into 8 slices
- 1 pound boneless, skinless chicken breasts, cut into 3-inch-long strips
- 3 Tbls. arrowroot powder
- 1 cup sliced shiitake mushrooms (or white button mushrooms)
- 1 cup packed baby spinach
- 1 red bell pepper, cored, seeded, and julienned
- 1 tsp. lime zest
- 2 Tbls. chopped fresh cilantro
Taco Salad*

Brown meat and add taco seasoning and water according to package directions
- 1-1/2 pound hamburger
- 1 package taco seasoning mix
- 8 ounces grated cheese
- 1 medium onion (chopped)
- 2 tomatoes (chopped)
- 1 head lettuce (torn)
- 4 ounces taco chips (crushed)

Combine the coconut oil and coconut milk in the bowl of a stand mixer fitted with a whisk attachment
- 1 c. Organic Coconut Oil, solid but not cold
- 1/4 c. whole Coconut Milk
- 1/4 - 1/2 c. Cocoa Powder (1/4 c. makes for a lighter flavor)
- 1/4 c. Raw Honey
- 1 t. Vanilla Extract
- 1/2 t. Almond Extract

Preheat oven to 375 degrees
- 1/2 cup butter,
- 3/4 cup sugar,
- 2 eggs,
- 3/4 cup sour cream
- 1 1/2 teaspoon vanilla,
- 2 cups unbleached all-purpose flour,
- 1/3 tsp chia seeds,
- 1/2 teaspoon salt,
- 1/4 teaspoon baking soda
- cinnamon sugar - mix ..1/4 cup sugar with 1/4 teaspoon cinnamon

- 6 Tablespoons butter
- 2 Tablespoons Worcestershire Sauce
- 1-1/2 teaspoon seasoned salt

- 1 sheet refrigerated pie pastry

Heat oil over medium heat in a large Dutch oven
- 2 tablespoons extra virgin olive oil
- 1 cup chopped onion
- 3 garlic cloves minced
- 2 cups diced carrots
- 8 cups low sodium chicken broth
- 2 cups chopped kale, stems removed
- 2 fresh sprigs rosemary
- 2 cups zucchini noodles
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups shredded cooked chicken
- 1 lemon juiced or 1/4 cup
Granny Smith Apple Crisp

In a 1.5 quart pyrex bowl, toss apples, xylitol and lemon juice Stir water and arrowroot together to make a slurry
- Filling:
- 4 large apples, peeled, cored and cut into 8 slices, then quarter each slice
- 1 tablespoon xylitol
- 1 tablespoon lemon juice
- 1/4 cup water
- 1 tablespoon arrowroot powder
- Topping:
- 1 cup blanched almond flour
- 1/4 teaspoon celtic sea salt
- 1 teaspoon ground cinnamon
- 1 tablespoon vanilla extract
- 1 tablespoon coconut oil
- 2 tablespoons xylitol
