Cowgirl Burgers

Mix all ingredients together in a bowl Shape into 8 patties and grill or bake until desired wellness
- 2 lbs of organic ground beef, buffalo, or turkey
- 1 egg white
- 4 T coconut aminos
- 1/2 C diced red onions
- 1/2 C diced (tiny tiny) zucchini
- 1/2 C diced (tiny tiny) red peppers
- 1/2 tsp-1tsp jalapeno flakes (depends on how spicy)

Preheat oven to 350 F. Grease 7 cupcake tins and set aside
- Peanut Butter Layer:
- 1/2 cup nut butter (110g)
- 1/4 cup powdered sugar or Sugar Free Powdered Sugar (30g)
- 1/4 cup milk of choice (add an extra tbsp if using a natural nut butter)
- Beat all ingredients together until smooth, using hand beaters. (If you must, you can just stir everything together with a fork using maximum effort and patience.)
- Cupcake Base (or you can use your favorite vanilla cupcake recipe):
- 1/2 cup plus 3 tbsp spelt flour (90g)
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup sugar of choice or xylitol (90g)
- 1/4 cup mayo-style spread such as Vegenaise (58g)
- 1 1/2 tsp pure vanilla extract
- 1/3 cup plus 1 tbsp water (95g)

Peel the sweet potatoes and chop into small pieces
- 1 pound (heaping 2 cups) sweet potatoes
- 3 tablespoons olive oil, separated
- 1 cup chopped sweet bell peppers (I used miniature assorted red, yellow, and orange)
- 1 cup white rice
- 1 can (14.5 ounces) petite diced tomatoes
- 1 can (15.25 ounces) black beans
- 1 cup frozen corn
- 1/2 teaspoon minced garlic
- 1/2 teaspoon chili powder
- 1 teaspoon cumin
- 2 cups vegetable or chicken broth (vegetable for a vegetarian meal)
- 2 tablespoons fresh lime juice, optional
- 1 and 1/2 cup shredded cheddar cheese

- 1 lb. organic chicken feet, or backs & necks
- 2 lbs. beef long bones or knuckles, sliced crossways
- 2 carrots, scrubbed and coarsely cut
- 2 stalks celery, washed and coarsely cut
- 1 onion, peeled and cut in half
- 3 cloves garlic, smashed
- 1 teaspoon black peppercorns
- 1 – 2 tablespoons apple cider vinegar
- 3 bay leaves
- 2 teaspoons unprocessed salt

- 1 gallon filtered water or more to fill pressure-cooker 3/4 full.
