Pasta with Red Sauce, Mushrooms and Sausage

Instructions Cook pasta according to package directions until al dente
- 1 pound pasta (fresh or dried) such as fettuccine or tube-shaped pasta
- 12 ounces bulk Italian sausage (sweet or hot)
- 8 ounces shiitake mushrooms, sliced
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 tablespoon dried basil
- 1/4 teaspoon pepper flakes (optional)
- 3 ounces prosciutto, chopped
- 1 cup chicken broth or dry white wine
- 1 (28-ounce) can crushed tomatoes
- 1/4 teaspoon sugar (optional)
- 1 tablespoon butter
- 1/3 cup Parmesan cheese, grated
Steel-Cut Oatmeal with Apricots*

Bring the liquid to a boil
- 1/2 cup steel-cut oats
- 1 1/2 cups liquid
- 4-6 chopped apriots
Roasted Cabbage

- 1 t. olive oil, 2 T. bacon bits, 2 T lemon juice, 1 T. worcestershire, 1/4 t. salt, 1/4 t. pepper, 1 Cabbage, quartered, individually wrapped.

Preheat oven to 350 degrees
- 2 cups oat flour
- 1 cup xylitol
- 1/4 cup coconut flour
- 1 tsp. baking soda
- 1/2 tsp. sea salt
- 1/3 cup melted coconut oil
- 1 tsp. apple cider vinegar
- 2 tsp. vanilla
- 1 cup vanilla coconut milk
Peaches and “Cream” Ice Cream

Place all ingredients into food processor or blender, except the reserved peaches
- 1- 400 ml. can of high fat coconut milk
- 3 c. sliced peaches (reserve 1/2 c. if you would like chunky ice cream)
- 1/4- 1/3 c. honey- depending on desired sweetness (maple syrup for vegan)
- 2 tsp. vanilla
- 2 tsp. ground cinnamon (optional)
- Refrigerate the can of coconut milk overnight. (No you can’t skip this step- believe me, I have tried)
Paleo Chocolate Chip Pizookie

- Preheat oven to 350 F. - Grease your mini 6″ cast iron skillets
- 2 cups sifted blanched almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 cup Enjoy Life Mini Chocolate Chips (soy free, dairy free)
- 1 organic cage-free egg
- 1/3 cup raw honey (melted)
- 1/4 cup coconut oil (melted)
- 1/2 teaspoon vanilla Extract

- 1 cup sugar
- 1 cup raw peanuts
- 1/8 teaspoon salt
- 1/4 cup water
- 1 teaspoon vanilla

Oven-Fried Green Tomatoes

Preheat oven or toaster oven to 350F/180C
- 6 green tomatoes, sliced about 1/2 inch thick
- 3/4 cup Honeyville Blanched Almond Flour (If you only have almond meal, I would buzz in food processor to make it finer)
- 2 tsp. Old Bay Lemon and Herb Seasoning (or any spicy seasoning mix; use more or less to taste)
- 2 eggs, beaten well
- 1/2 cup Ranch Dressing (I confess I love the Ranch mix in a package that you mix with buttermilk)
- 1-2 tsp. Sriracha Rooster Sauce (start with 1 tsp. and taste to see if you want it more spicy)
Peaches and Cream Dairy Free Smoothie

- 1 whole peach, large
- 1 cup coconut milk* or other dairy free milk
- 1/4 cup frozen fruit of your choice
- 1 tablespoon coconut cream concentrate
- 2 tablespoons fresh ground nuts
- 1 tablespoon dried coconut flakes
- 1 tablespoon honey
- 4 ice cubes
