- Chill: Several hours
- 1 1 head 1 large head cauliflower, chopped
- 1 1/2 1 1/2 1/2 cups fat-free mayonnaise
- 1/2 1/2 1/2 cup fat-free sour cream
- 3 3 3 tbsp. Hellmann's/Best Foods Dijonnaise
- 1/2 1/2 1/2 envelope dry ranch dressing/dip mix
- 2 2 2 tbsp. fat-free non-dairy liquid creamer
- 1/4 1/4 1/4 tsp. salt
- 6 6 6 hard-boiled egg whites, chilled and chopped
- 2 2 2 celery stalks, diced
- 1 1 1 cup diced red onion
- 1/4 1/4 1/4 cup chopped chives
- 3 3 3 tbsp. seasoned rice vinegar
- 2 2 2 tbsp. chopped dill
- 2 2 2 tbsp. chopped parsley, plus more, for optional garnish
- Optional garnish: paprika
- 1/3 6 8 to large microwave-safe bowl with 1/3 cup water. Cover and microwave until soft, 6 - 8 minutes. Once the bowl is cool enough to handle, drain any excess water.
- Refrigerate for several hours before serving. Garnish with paprika and additional parsley, if you like. Mmmmm!

- HG Alternative! Cauliflower can be steamed on the stove in a metal steamer pot instead of in the microwave... Your call!
Carrot Cake in a Mug with Sour Cream Icing

Place dry ingredients in a large coffee mug and mix well with a fork
- 2 tbs brown sugar
- 1/4 tsp ground cinnamon
- 1/2 egg
- 2 tbs carrot grated
- 1 tbs carrot mashed
- 1 tbs oil
- 1 tbs sultanas optional
- 1 tbs walnuts finely chopped optional
- 4 walnuts *to decorate
- 2 drops vanilla extract
- Sour cream icing
- 1 tbs sour cream
- 3 tbs icing sugar
Chicken Avocado BLT Wraps

Shake the vinaigrette ingredients in a jar
- For the vinaigrette:

This easy soup is a great option if you have made some New Year’s resolutions and want to lose some weight
- 4 cups = 960 ml chicken stock OR veal stock OR even better: bone stock
- 1/3 cup = 80 ml dried, organic soup vegetables
- 2 tablespoons melted organic extra virgin coconut oil
- 1 pinch (or to taste) organic cayenne pepper
- unrefined sea salt to taste
- What you should notice about the veggies: Just be sure that the soup vegetable mix doesn’t contain potato, beans, peas or other high-carb veggies. Neither should it contain anything additional, like starch or food additives. Herbs are perfect, though.
- I’ve used bone stock and vegetable mix consisting of onion, carrot, turnip, leek and parsley.

- 1 glass of water (12-16 oz.)
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. lemon juice
- 1 tsp. Cinnamon
- 1 dash Cayenne Pepper (optional)
- stevia to taste

Phase 3 | Serves 4 Place all the soup ingredients in a blender and blend until smooth
- For the soup:
- 2 large ripe Hass avocados
- 1 cup unsweetened almond milk
- 1 cup low sodium organic vegetable broth
- 1 large tomatillo, chopped
- 1/2 jalapeño pepper, roughly chopped (you can use 1 whole for extra heat)
- 1 garlic clove (optional)
- 2-3 tablespoons fresh lemon juice (to taste)
- 1/2 teaspoon sea salt
- For the topping:
- 2 – 5 ounce cans solid white albacore tuna, packed in water
- 1/2 large red bell pepper, chopped small
- 1 tablespoon chopped chives
- 1-2 tablespoon lemon juice (to taste)
- 1/8 teaspoon sea salt
Orange Poppy Seed Cake

Make sure ingredients are at room temperature
- 1-3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1-1/4 cups sugar
- 1/2 cup margarine, softened
- 2 large eggs
- 1 egg white
- 3/4 cup orange juice
- 1/2 cup skim milk
- 1/2 cup poppy seeds
- 1/2 cup low-fat sour cream
- 1 Tablespoon grated orange peel
- Confectioners’ sugar for garnish
- Red and green grapes for garnish
