Italian Sausage Soup

Directions In a stockpot or Dutch oven, brown sausage with garlic
- 1 pound Italian sausage
- 1 clove garlic, minced
- 2 (14 ounce) cans beef broth
- 1 (14.5 ounce) can Italian-style stewed tomatoes
- 1 cup sliced carrots
- 1 (14.5 ounce) can great Northern beans, undrained
- 2 small zucchini, cubed
- 2 cups spinach - packed, rinsed and torn
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt
Tomato Coconut Soup

Chop the onion and tomatoes roughly
- Servings: 2
- Preparation Time: 30 minutes
- 1/2 onion (approximately 2.5 oz)
- 3 medium sized tomatoes (approximately 13.5 oz)
- 2 whole black peppers
- 1 whole clove
- 1/2 inch cinnamon stick
- 1/2 teaspoon minced ginger
- 1/2 teaspoon minced garlic
- 2 tablespoon organic whole cane sugar (or as per your liking depending on how sour the tomatoes are)
- 1/2 teaspoon Himalayan pink salt
- 1/2 cup coconut milk made from coconut cream concentrate or organic shredded coconut*
Slaw*

Bring the sauce to a boil, and cook for 3 minutes
- large green pepper, chopped fine:
- 1 head cabbage, chopped very fine
- Soak for 1 hour in salt water, to cover
- Sauce:
- 1/2 cup vinegar
- 1 cup sugar

- 1 cup carrot (finely grated or finely chopped in a food processor)
- 1/2 tablespoon vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup applesauce
- 1/4 cup coconut oil
- 1/4 cup raw honey (use 1/2 cup if you don't have stevia)
- 1/4 cup coconut milk (melted)
- 3 eggs
- 1 teaspoon xanthan gum
- stevia (1/2- 1 dropper NuNaturals)
- 2 dashes ginger

I should warn you that when I took this out of the fridge it was GREEN
- (makes 9 pancakes)
- 3/4 cup whole grain flour (wheat, oat, etc.)
- 3/4 cup rolled oats (not instant)
- 1 tsp baking soda
- 1 tsp pumpkin pie spice
- 2 Tbs sugar
- 1 cup milk
- 3/4 cup canned pureed pumpkin

- 6 egg whites
- 3/4 teaspoon cream of tartar
- 2 teaspoons vanilla extract
