Hot Coconut Flaxseed Cereal

You will be surprised how filling this hot breakfast cereal can be, especially if coconut milk is used
- 1/2 cup ground flaxseed
- 1/2 cup unsweetened (carton) coconut milk, almond milk, hemp milk
- 2 tbsp coconut flakes (unsweetened)
- 1/4 cup walnuts (halved or chopped) or raw sunflower seeds
- 1/2 teaspoon ground cinnamon
- Choice of berries, e.g., blueberries, blackberries, sliced strawberries, etc.

PASTA WITH BACON IN TOMATO CREAM SAUCE

In a skillet, cook the bacon until crisp
- 4 slices bacon
- 2 scallions, sliced thin
- 2 tbsp. unsalted butter, cut into bits
- 2 tbsp. flour
- 1 c. heavy cream
- 1/2 c. freshly grated Parmesan
- 1/2 c. peeled, seed and chopped tomato
- 1/4 tsp. white pepper
- 1/8 tsp. nutmeg
- 1/4 tsp. salt
- 1/4 lb. cheese filled tortellini, cooked
