I like to add a little salt or a squirt of lemon (if I have it) to my avocado toast
- 1/4 ripe avocado
- 1 slice 100% whole grain toast
- salt to taste

- 2 tsp cumin
- 1 tsp paprika
- 1/4 tsp saffron, crushed
- 2 bay leaves
- 2 tsp salt
- 1/2 tsp pepper
- 2 cups brown rice, uncooked
- 3 1/2 cups chicken broth

- 1/4 cup chopped red onion
