Dish Do-Over: Chicken Nuggets with Honey Mustard

Preheat oven to 350F. Toss panko with 1 tsp salt until combined
- Honey Mustard Sauce:
- 2 1/2 cups panko breadcrumbs (Gluten-Free variety available at specialty grocers)
- 11/2 tsp sea salt, divided
- 3/4 cup egg whites
- 3/4 cup 1-percent buttermilk
- 1/4 tsp cayenne pepper
- 1 lb boneless, skinless chicken breasts, chopped into 1-2" chunks
- 1/2 tsp each onion powder and Italian seasoning
- 1/4 tsp freshly ground black pepper
- 3/4 cup whole wheat or brown rice flour
- 1 cup non-fat Greek yogurt
- 1/4 cup each honey and yellow (or Dijon) mustard
- 2 tbsp finely chopped fresh chives or flat-leaf parsley (optional)
- sea salt and freshly ground black pepper to taste

Preheat the oven to 350 F, and grease a 9×5 loaf pan
- 2 cups spelt, all-purpose, or Bob’s gf flour (250g)
- 1/2 tsp plus 1/8 tsp salt
- 2 tsp baking powder
- 1/2 tsp cinnamon, optional
- If using gf flour, add 1 tsp guar gum
- 1/2 cup xylitol or sugar of choice (100g)
- pinch stevia or 2 extra tbsp sugar
- 1 cup milk of choice (240g)
- 1 tbsp white or apple cider vinegar (15g)
- 2 tsp pure vanilla extract
- 3 tbsp coconut or vegetable oil (30g)
- 1 1/2 cups blueberries (200g)

- 1 Large SWEET onion diced

- 6 cups dry oatmeal (I like the Quaker brand old fashioned instead of the quick oats)
- 1-2 Jar(s) Heinz Turkey Gravy
