Don’t be tempted to bake all the cakes on one baking sheet; the batter needs room to spread in the oven
- Cakes:
- 2 cups all-purpose flour
- 1/2 cup Dutch-processed cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon table salt
- 1 cup packed light brown sugar
- 8 tablespoons unsalted butter (1 stick), softened but still cool
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- Filling:
- 12 tablespoons unsalted butter (1 1/2 sticks), softened but still cool
- 1 1/4 cups confectioners' sugar
- 1 1/2 teaspoons vanilla extract
- 1/8 teaspoon table salt
- 2 1/2 cups Marshmallow Fluff

Preheat oven to 350. Spray a 9X13 pan with cooking spray
- 1/2 cups Whole Wheat Flour
- 3 tablespoons Bran
- 1 1/2 teaspoons Baking Soda
- 3/4 teaspoon Cinnamon
- 1/4 teaspoon Nutmeg
- 3 cups Shredded Apples
- 1 cup Honey
- 3/8 cup Safflower oil
- 3/4 cup Nuts (optional)

Soft Orange Custard Recipe

In a small bowl, beat butter and sugar on medium speed for 1 minute
- 2 tablespoons butter, softened
- 2/3 cup sugar
- 2 eggs, lightly beaten
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup orange juice
- 1-1/2 teaspoons grated orange peel
- 1 teaspoon lemon juice
- 1 cup fat-free milk
Overnight Crock Pot Oatmeal: No Sugar Added

Spray the inside of a small 4 quart crock pot with nonstick cooking spray
- 2 cups milk (I used 1%, soy or almond is fine too)
- 1 c. rolled oats work best, but quick oats can be used as well.
- 1 tbsp. butter
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- sugar-free sweetener of choice (I use Sweetleaf Stevia, vanilla creme liquid drops)
- optional fruit toppings: raisins, strawberries, banana’s
1950's Pot Roast Special for the Busy Cook

This recipe had to be invented in the 50's by Mrs
- 2 1/2 lbs. beef chuck or bottom round roast
- 1 can cream of mushroom soup, undiluted
- 1 envelope dried onion soup mix
- 1 medium yellow onion, 1/3" thick
- trimmed, peeled, and sliced
- 3 sprigs fresh herb, such as tarragon thyme, or savory
- 3 russet potatoes, 2 cups
- washed, peeled, and cut into 2" chunks
- 5 carrots, peeled and sliced
- on diagonal into 2" chunks

- 1/2 cup plain yogurt
- 1/4 teaspoon vanilla extract
