Paleo Carrot Soup

Heat coconut oil in a large saucepan Saute onion, carrot, and apple in coconut oil until tender Add ginger to sauce
- 2 tablespoons coconut oil
- 1 small onion, peeled and chopped
- 5 large carrots, chopped (around 1 pound)
- 1 green apple, chopped
- 1/2 ounce fresh ginger, chopped
- 1/3 cup orange juice
- 1 can coconut milk
- 2 cups chicken stock or water
- 1/8 teaspoon cayenne pepper (optional)
- 6 drops stevia (optional)
- Garnish with fresh lime

- 1/2 teaspoon dried thyme

- Cashew-Dill Cream:
- 1/2 cup raw cashews (soaked for 2 to 3 hours)
- 1/4 cup water
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons extra virgin olive oil
- 1 small garlic clove, peeled
- 1/2 teaspoon sea salt
- small handful fresh dill
