Butter a rimmed baking sheet
- 1 Tablespoon baking soda
- 1 teaspoon baking soda
- 1 cup shelled pumpkin seeds, toasted
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup cold water
- 1 Tablespoon unsalted butter, room temperature
Rhubarb Protein Smoothie P 2

Cooking Rhubarb: wash pieces, cut off ends cut into 2 inch pieces, cover with filtered water in pot 2 tablespoons X...
- 2 scoops pea protein powder or 1 scoop Jay Robb's egg white (makes it like a mousse)
- 2 cups cooked rhubarb (see below)
- (sometimes I add 1 handful fresh spinach and only 1 cup rhubarb)
- Add to taste: cinnamon, nutmeg, Stevia (sometimes 1/2 tablespoon raw cacao)
- Blend to desired consistency by adding water as needed. I use some of the liquid that was produced when cooking the Rhubarb.

- 1 1/4 C pureed pumpkin
- 1/4 C agave
- 1/4 C vegetable oil
- 1 t vanilla
- 2 1/3 C rolled oats (not instant)
- 1/3 cup brown rice flour
- 1/3 cup that is half brown rice flour and half tapioca flour (or for non-GF, use 2/3 cup whole wheat flour for brown rice and tapioca)
- 2 t cinnamon
- 1/2 t sea salt
- 1 t baking powder
- 1/3 C chopped pecans
- 1/3 C semi-sweet chocolate, chopped (or chocolate chips) or raisins
