Raw Almond “Cheese”

Prep time: 1 hour Total time: 1 hour Soak almonds in water for at least 1 hour, then drain
- 1/3 cup raw almonds
- 1/8 teaspoon sea salt (or more to taste)
- 1 tablespoon nutritional yeast
- 2 – 3 tablespoons water, or more as needed
- 1 tablespoon fresh chives, chopped
Cherry Cream Cheese Frosting

Directions Blend all together to top on any cake
- 1 pkg. cream cheese
- 1 box powdered sugar
- a dash of vanilla
- maraschino cherries
Cinnamon Honey Butter!

I used the whisk attachment for my mixer and whipped the butter {make sure it’s soft and room temp}
- 2 sticks of butter at room temp
- 1 cup powdered sugar
- 1 cup honey
- 2 teaspoons of ground cinnamon
Slow Cooker Pork Stew

Heat the olive oil in a large frying pan and cook the pork until it's well browned, about 8-10 minutes, seasonin...
- 2 lbs. trimmed pork cubes (I started with about 2 1/2 pounds pork sirloin chops and trimmed off all the fat to make 2 pounds of pork cubes, you could also use pork loin chops.)
- 1 T + 1 T olive oil
- salt and fresh ground black pepper to taste
- 1/2 cup water
- 1 large onion, chopped (about 1 1/2 cups chopped onion)
- 2 T minced garlic
- 1 T ground cumin
- 1 T dried oregano (I used Mexican oregano, but regular oregano will probably work too.)
- 2 cans Ro-Tel Tomatoes with Mild Green Chiles (be sure to get mild, unless you really like hot food!)
- 1 can diced green Anaheim chiles (I used a 7 oz. can, but next time I'd use a 4 oz. can, so decide how spicy you want it. Be sure to get Anaheim chiles and not Jalapenos, which are much hotter.)
- 2 T fresh lime juice
- Optional: sour cream for serving
- I used a 3.5 quart slow cooker for this recipe, but a 3 quart size would also work.
Wimp's Fresh Salsa*

This is a JoAnna Lund recipe I changed to suit my taste
- 4 1/2 cups peeled and finely-chopped tomatoes
- 1/2 cup finely-chopped onion
- 1/2 cup finely-chopped celery
- 1/2 cup finely-chopped green bell pepper
- small amount of finely-minced hot pepper
- 2 Tablespoons vinegar
- 2 teaspoons Morton's Nature's Seasoning blend
- 1 Tablespoon Splenda sugar substitute
- 1 teaspoon chili seasoning
- 1/4 teaspoon black pepper

- 12 oz 96% lean ground beef
- 1 cup finely chopped puffed brown rice (such as arrowhead mills)
- 4 cups unsalted beef stock

- 8 cups washed spinach
