Chicken and Vegetable Soup

- 1 1/2 tablespoons extra-virgin olive oil
- 1 cup chopped onion
- 1/2 cup chopped carrot
- 1 tablespoon minced fresh garlic
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon salt
- 1 thyme sprig
- 3 cups fat-free, lower-sodium chicken broth
- 1 (14.5-ounce) can no-salt-added, fire-roasted diced tomatoes, undrained
- 1/2 cup uncooked orzo (rice-shaped pasta) or pastina (tiny star-shaped pasta)
- 5 ounces green beans, cut into 1-inch pieces (about 1 cup)
- 1 cup shredded skinless, boneless rotisserie chicken breast
Hot Fudge Sauce

Melt butter, then add salt and chocolate and stir until chocolate melts
- 1/2 cup butter
- 1/2 teaspoon salt
- 4 squares bakers unsweetened chocolate
- 3 cups sugar
- 1-1/3 cup evaporated milk
Corn Bread Taco Bake

In skillet, brown meat; drain
- 1-1/2 pounds ground beef
- 1 (1-1/8 oz) packet taco seasoning
- 1/2 cup water
- 1 (12 oz) can whole kernel corn, drained
- 1/2 up chopped green pepper
- 1 (8oz) can tomato sauce
- 1 (8-1/2oz) corn muffin mix
- 1 (2.8 oz) can French Fried onions
- 1/3 cup shredded Cheddar cheese
Sweet Potato Chocolate Cake Phase 3

Preheat over to 350 & have a 6 in pan lined with parchment

- 1/4 cup coconut oil melted (4 TB)
- 3 TB plus 1 TB coconut sugar (or Xylitol, I used stevia), divided
- 3 large eggs, separated
- 3/4 cups cooked and mashed sweet potatoes
- 1/2 teaspoon almond extract (be sure it does not contain alcohol)
- 5 oz homemade chocolate or carob chips melted and cooled (remember you can use cocoa powder unsweetened of course)

Breakfast Biscuit Quiches

HEAT oven to 350°F. COMBINE cheese, ham and green onions in small bowl; mix well
- 2/3 cup shredded Swiss cheese
- 1/3 cup finely chopped ham
- 1/4 cup finely chopped green onions
- 3 EGGS
- 2 tbsp. milk
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 pkg. refrigerated buttermilk biscuits, (12 oz.; 10 biscuits)
- Yields: 10 mini quiches
Chewy Brownie Cookies

In a large bowl, cream shortening and sugar until light and fluffy
- 2/3 cup shortening
- 1-1/2 cups packed brown sugar
- 2 eggs
- 1 tablespoon water
- 3 teaspoons vanilla extract
- 1-1/2 cups all-purpose flour
- 1/3 cup baking cocoa
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 2 cups (12 ounces) semisweet chocolate chips
- 1/2 cup chopped walnuts or pecans, optional
Carb Free Cloud Bread

These are a delicious home-made bread replacement that are practically carb free and very high in protein
- 3 eggs, separated
- 3 tablespoons whole milk cottage cheese or 3 tablespoons cream cheese
- 1/4 teaspoon cream of tartar
- 1 (1 g) packet artificial sweetener
Healthy Peanut Butter Fudge

(If peanut butter is not stir-able, gently heat until you are able to easily stir it
- 1/2 cup peanut butter or allergy-friendly alternative (110g)
- 1 large banana (150g) (Can sub with 2/3 cup coconut butter)
- 1 tsp pure vanilla extract
- 1/16 tsp salt (I also used salted peanut butter)
- 2 tbsp coconut butter OR melted virgin coconut oil (You can sub with 2 tbsp pb. Texture will just be less fudge-like. Or see note below for a possible substitution.) (20g)
