1. Line 2 loaf pans with parchment paper & preheat oven to 325
- 3 c Spelt flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 3 tsp cinnamon
- 3 egg whites
- 1 med apple, peeled and blended into a sauce
- 2 c xylitol
- 3 tsp vanilla
- 2 c grated zucchini

- Double boiler (I use a metal bowl over a small pot of simmering water)

Place the coconut oil in a medium sized saucepan, over medium heat
- 2 tablespoons coconut oil
- 2 tablespoons coconut flour
- 16 oz rice milk
- 14 oz coconut milk*
- 1/4 teaspoon turmeric
- 1 teaspoon Dijon mustard
- 1 teaspoon Himalayan salt
- 1/8 teaspoon ground black pepper
- 1 head of cauliflower, steamed and drained
- 2 tablespoons nutritional yeast, optional
- Shredded parmesan cheese, to taste
- Tamari sauce (optional)

Roasted Garlic Cauliflower Mashed "Potatoes"

Pre-heat oven to 400 degrees
- 1 bulb of garlic
- 2 tsp olive oil
- 1 head of cauliflower
- 1/2 cup unsweetened almond milk + more to thin (or milk of choice)
- heaping 1/4 cup plain Greek yogurt
- 1 tbsp butter, melted
- 1/2 tsp salt
- pepper to taste
- 1/4 green onions, chopped
