Sweet Potato Hash Brown Quiche

Make the crust: Peel and coarsely shred the sweet potatoes
- For the crust:
- This recipe takes some time, but it's worth it for a special meal. We tried just making the hash browns right in the pie plate, and they just didn't crisp up on both sides. So preparing them in the skillet is the way to go.

- Total time: 2 hours
- 1 1/2 pounds sweet potatoes
- 1/4 teaspoon sea salt
- 1/8 teaspoon black pepper
- 3 tablespoons olive or coconut oil, divided
- For the filling:
- 1 tablespoon olive oil
- 2/3 cup chopped onion
- 2/3 cup diced red bell pepper
- 5 asparagus spears, trimmed and chopped into 1-inch pieces

- 1/2 cup unsweetened almond milk
- 1 tablespoon arrowroot powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon paprika

- 2 handfuls fresh baby spinach

- 2/3 cup sifted coconut flour
- 1 teaspoon baking powder
- 1/2 teaspoon Himalayan salt
- 1/2 cup shredded unsweetened coconut
- 8 eggs
- 1/2 cup raw honey
- 1/2 cup fresh lemon juice (l lemon)
- 1 teaspoon lemon extract
- 1/2 cup melted butter (or 1/4 cup butter and 1/4 cup coconut oil, melted)

- 16 ounces mini marshmallows (good brand)

- 2 lbs. powdered (C&H brand) sugar

War Cake

In medium sized pan, mix together the first 7 ingredients
- 2 cups brown sugar
- 2 cups hot water
- 2 teaspoons shortening
- 1/2-3/4 cup raisins
- 1 teaspoon cinnamon
- 1 teaspoon cloves
- 1 teaspoon salt
- 3 cups flour
- 1 teaspoon soda, disolved in a small amount of water
