Crab Cakes with Sweet White Corn & Tomato Relish

Crab Cakes: Melt 2 tbsp butter over medium heat; add onion and garlic and saute til tender
- Crab Cakes:
- 6 tbsp butter, divided
- 1 small sweet onion, chopped
- 2 garlic cloves, minced
- 1 lb. fresh lump crab meat, drained
- 3 cups soft breadcrumbs, divided
- 1/4 cup mayo
- 1 large egg, lightly beaten
- 2 tbsp chopped fresh parsley
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp hot sauce
- 1 tsp fresh lemon juice
- Relish:
- 4 ears fresh sweet white corn
- 2 large tomatoes, peeled and chopped
- 3 green onions, sliced
- 2 tbsp fresh lemon juice
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp garlic powder
- 1/8 tsp hot sauce
Coconut-Pineapple Loaf Cake

Preheat oven to 350. Toast coconut, tossing occasionally, 6 to 10 minutes
- 1 1/2 cups sweetened shredded coconut
- 1/2 cup unsalted butter, room temp
- 1 1/2 cups all purpose flour
- 1/2 tsp baking soda

Chicken & Spring Vegetable Lo Mein

- 2 TBSP vegetable oil
- 1/2 onion, thinly sliced
- 2 TBSP finely chopped garlic
- 2 TBSP finely chopped fresh ginger
- 1 pkg (8 oz) dried lo mein noodles
- 1 small head cabbage, thinly sliced (3 cups)
- 1 small red bell pepper, thinly sliced lengthwise
- 1/4 lb shiitake mushrooms, stem discarded and caps thinly sliced
- 1/3 lb snow peas, trimmed and halved crosswise
- 1 carrot, peeled and cut into matchsticks
- 1/4 cup plus 2 TBSP soy sauce
- 3 TBSP dry sherry
- 1 TBSP toasted sesame oil
- 22 cups cooked chicken, sliced into bite-sized pieces
- Salt
- 1/4 cup chopped peanuts, for sprinkling
Jerk Chicken

Blend all of the marinade ingredients together in a food processor til smooth
- 1 bunch scallions, chopped
- 3 large garlic cloves, chopped
- 1 habanero chile, chopped
- 1 lime, juiced
- 3 TBSP olive oil
- 2 TBSP soy sauce
- 1 TBSP packed brown sugar
- 2 tsp ground allspice
- 1 tsp chopped fresh thyme leaves
- 1/2 tsp cinnamon
- 1/4 tsp ground nutmeg
- 4 skinless boneless chicken breasts
- Kosher salt and fresh black pepper
Enchilados de Pollo

- 1/4 cup chopped fresh cilantro (4 tsp dried)
- 1 egg
- 1/8 tsp salt
- 1 (11 oz) can tomatillos, drained
- 1 (4.5 oz) can chopped green chiles, undrained
- REMAINING INGREDIENTS:
- 8 (6-inch) corn tortillas
- 2/3 cup sour cream
Champagne Vinaigrette
